One of the greatest experiences in my life was many years ago at a restaurant in Parma. Instead of a dessert menu the waiter just rolled out a cart with a large piece of parmigiano reggiano, My wife and I got a nice chunk, Life can't get any better,
I love how passionate Italians are about their cheese. If I ever get the chance to visit Italy, I would go strictly for the cheese.

I'm salivating!! Parmigiano is king of cheeses, beautifully aged, smelly and delicious. On the other hand, I have had mozzarella that was only 2 days old and I can't tell you how sweet and fragrant it was. Mmm... cheese!!!
This is one time where we can truly envy someone cutting the cheese.

I remember being in a deli in Parma many years ago that looked a lot like his.... The scent is truly mind blowing, even when something like this isn´t being opened. I can´t imagine how great that must have smelled.

I love the relationship between all Romance languages. I'm a Spanish speaker, born in Mexico but living in the U.S. and yet I was able to understand a lot of what he was saying in regards to the cheese (which looked so delectable and delicious). I would love to visit Italy one day. I would double my weight in eating cheese alone and it would be worth it. Saludos, Vincenzo desde California.

When I was quite young I found, to my annoyance, that aged cheddar triggered migraines (and ONLY aged cheddar type cheeses would do this). I liked a good aged cheddar and would not touch a block of "orange" nastiness with a ten foot pole. Why couldn't it have been brussel sprouts that gave me migraines as I could quite willingly forgo them? Well, this turned out to be a blessing in disguise as it made me try many other cheeses. Parmagiano isn't cheap but it truly is the King of cheeses. A sliver of it, all on its own is fantastic. So many cheeses, so little time!

Although parmigiano reggiano and pecorino romano/sardo are lovely cheeses, I really liked castelmagno, asiago and scamorza cheeses. Especially castelmagno, which was bought in Italy and had a really strong, tangy flavor.
I wish you made videos about more obscure Italian cheeses like these and how to use them in recipes since Italy has lots of other delicious cheeses that many people simply don't know about.
My grandfather took a trip to Italy and brought home some goodies from the shops. He did bring some cheeses back to U.S.A. in his suitcase. LOL. He couldn't get the smell out of his shirts and pants!!!

Vincenzo...how long will Parmigiano Reggiano keep once it has been opened? I live in a small Kansas town. Walmart used to carry Parm Reg 24 months aged, but they no longer stock it. My only other way to get it is to drive 70 miles round trip to purchase it at Whole Foods. Purchasing on the jungle website seems to be a gamble. I don't want to drive there very often. I'm thinking of buying 2 pounds, but only if it will keep for a few months. Storage recommendations would also be appreciated. THANK YOU!

There was this big Italian deli in New Jersey where I used to live. I always bought Soppressata there and they had similar wheels of cheese. Always wanted to order some but I allready had a hard enough time ordering gavadeel or gabagool because that's not what the letters spell

I am making a Parmigiano Reggiano like cheese as I live in the US and ehat I make followd the tradifion but sinve not from the right area is not officially Parmigiano Reggiano.
I use raw milk and so far it is aged 10 mos for a 2 lb wheel.
Waiting to try it is difficult. I want to try it before I make more.
I also plan on making a Pecorino Romano type as well as I have access to raw sheep's milk.
I made some Parmesan like cheese as well. Can't find sheep's milk where I am for the Romano like cheese so I made a vaccino Romano. They both smell out of this world..can't wait until they are aged for a year or more.

Good on ‘ya! Where are you sourcing raw milk? Pasteurised milk simply will not do for these cheeses as they are made from uncompromised, raw milk

Looks so good, I saw a review on a website that the lady was upset that the cheese crumbled when they opened, and said it must have been frozen. SMH, some people don't deserve nice things.

This brings back bad memories. I had a 7 years parmigiano reggiano directly from Italy that I was saving. I hid it in the refrigerator behind many things. I found it open in the freezer behind some meat. It could have been there for weeks. My father likes to go into my apartment to steal food. He opened it, tasted it, did not like it and hid it in the freezer without even bothering to reseal it.

That was really cool to see. I could almost smell the cheese over here in the states.
Parmesano Regiano is out of my budget, unless its free. That said I do buy the domestic Parmesan and its superior to standard parmesan by far. I just wish that I could find it in aged over a year. 9-10 months aging is the standard for domestic Parmesan. If I can't afford the domestic Parmesan, then I go without because the standard parmesan is 50% or more cellulose filler and tastes like cardboard.
I wish that I lived on a small farm and I could make all of my favorite cheeses.
I live right next to Italy, in Switzerland, and Parmigiano Reggiano 72 months (6 years) old is $120 per kilo...
@@crankytec American domestic Parmesan at the cheapest store is $13 a pound or .4 kilo and is aged 10 months. I live in rural Washington state.

I remember cutting this cheese, it was like cutting a rock and it was quite heavy to lift too. No wonder a single unit of this alone is expensive as hell.
But the taste...is jawbreakingly delicious.

53 Euros for a kilogram of over 5 year old Parmiggiano is something I would EASILY give even though I am not a wealthy man. The quality of these products shown at the end seems to be out of this world. I will try my best to get my hands on one of these as soon as possible.

I've enjoyed a 4 years old Parmigiano reggiano, I found it too much tasty, little heavy and not for all and not for every use in cooking. Beside the luxury price, I do not think that Parmigiano could be as better as more seasoned. On my personal opinion, the 24-30 months seasoned could be the best version as for plate (with little honey) as for cooking. This 7 years version could be not easy to appreciate ( your wallet permitting)
