    Great video as always! My favorite Italian cheese is Crucolo from Trentino. Our local cheese shop in Concord, MA imports a 400 lb wheel every year and parades it through the streets for the Crucolo Festival, free cheese samples for everyone!

    I so much enjoy your content. I was stationed in the Puglia region in the 80s and early 90s at San Vito Dei Normanni and miss my time in Italy. You bring back so many memories with your content. I stayed in trouble with the US Air Force for my weight while stationed there. 😂

    This is my first time watching a full vlog of yours. I’d seen a couple of shorts and this one hooked me in. The church bell’s, beautiful stone wall in the background, birds chirping, a little bit of rain. The perfect setting. All of the cheeses look so delectable.

    How dare the US Air Force at Aviano interrupt the Pasinis? We should teach them a lesson! Eating cheese with a beautiful stone wall background and church bells ringing...what a vibe. Even though I grew up in Switzerland and so I'm biased to say Swiss cheeses are the best, it doesn't take long to see why Italy is the cheese capital. No country is prouder of its food than Italy! Italy is the country with the highest variety of cheeses in the world, with over 2,500 traditional varieties, among which are about 500 commercially recognized cheeses and more than 300 kinds of cheese with protected designation of origin. From Gorgonzola to Montasio and Burrata, there's an Italian cheese for everyone!

      Please rewind the video and take another look at the Best 50 cheeses in the world ranking!!.. France got 9 tipes of cheese and the first is a the 13 position... Italy got 18 tipes of cheese, 4 Consecutive in the first 4 positions and in the first 10 there are ONLY two non-Italian cheeses!!! And Italy is 3 time smaller than France....

    Oh, what a wonderful video! There is so much I can say because I love Italian cheese. Just last night at 3AM I made myself some chicken and pasta with Parmigiano Reggiano DOP. That cheese is always in my kitchen since I was a child. Alessio, your family and their home warms my heart. The best moment for me, in the video, was when Jessi made the sign of the cross after Alessio almost dropped the cheese. As so many people have said, you make me feel like I am right there with dear friends. Thank you, so much! I love you both.

    Cheese comes from the Latin word caseus, which in turn comes from a Proto-Indo-European word that means "to ferment, become sour”. When Romans made hard cheeses for their legionaries' supplies, they called it formaticum, and it is from this word that formaggio in Italian and fromage in French comes from.
    There is no conclusive evidence indicating where cheesemaking originated. Earliest proposed dates for the origin of cheesemaking range from around 8000 BCE, when sheep were first domesticated. However the earliest evidence of cheesemaking in the archaeological record dates back to 5500 BCE and was found in what is now Kuyavia, Poland. Meanwhile ancient Greek mythology credited Aristaeus with the discovery of cheese.

      In Italy we call "caseificio" the dairy, "formaggio" or "cacio" the cheese (in my hometown in Verona, the cheese is also called "casato") and "prodotti caseari" or "latticini" all the products made by diaries (butter, yogurt, formaggio, cream, ricotta, mascarpone etc...)

    "I feel like I'm having a picnic right now" that's Jessi's British heritage shining through 😆Sure certain cheeses may smell fouler than others but of course, what matters is the taste, and more people should learn to give things a chance. Here's some Montasio history: It's named after the Montasio plateau, and the cheese has been made there since 1200! The first production techniques were refined at the abbey of San Gallo di Moggio Udinese. In the 1880s, a cooperative movement of dairies was formed to support the cheese's production. And a century later in 1987, the Ministry of Agriculture and Forests assigned the Montasio Producers Association the tasks of control and marketing of Montasio production (after being awarded DOP in 1986).
    Kudos to Portugal and Mexico for also making it in the top ten at 2:32! Oaxaca is a very good cheese, perfect for a nice quesadilla with a good stretch. It became a thing thanks to friars introducing the string cheese process to Mexico! Serra da Estrela cheese on the other hand comes from the highest mountains of mainland Portugal and like Italian cheeses, it is a PDO/DOP. It is made using the milk of two rare sheep breeds called Bordaleira da Serra da Estrela and Churra Mondegueira. Cheesemaking in this region dates all the way back to 1287 when King Dinis created the first cheese market in the rustic Celorico da Beira located in the heart of Serra da Estrela. And Portuguese explorers brought the cheese on board as a sustainable and nutritious source

    Love, love, love, cheese and those from Italy are my all time favorite. Great video. The drops from the sky, laying on the table and that background added great ambiance to this clip! I think that beautiful mosaic wall was a family art project if I'm not mistaken.

    5:08, nice save there Alessio:))) The cheese selection looks so good! The goat cheese is my favourite. It smells very strong but is one of the healthiest products out there full of probiotics. Maybe we can see the salumi taste test as well. I am sure you both have spent Easter together before in Italy but it is such a special time of the year and it has a culinary uniqueness in each European country. It is one of the best times to be at home and spend it with the family. Buona Pasqua!

    You have to try Delice de Bourgogne. It is like butter and you can spread it on crusty bread. Mont d'Or is also wonderful cheese.

    I enjoyed that. I've never heard of some of them & probably couldn't afford them. My go to cheese in Canada is very extra old cheddar. The more years the better. It has to crumble not be bendy. And have a strong bite.

    My favourite cheeses that I used to eat with my father were friulano and caciocavallo. There was another one, I remember it being a bit strong but very good. I wish I could remember the name.

    The one area where Italian cuisine falters is cheese - not because it's bad but because it doesn't hold the level of importance in Italy as cheese does in France or the UK. I love _armesan, Gorgonzola, Burrato, Pecorino Romano and Tagliatelle. Americans miss the Cheddar family. French miss the double and triple cream families.

      @@walter_the_danger thanks for your thoughtful post. (LOL) We lived in Italy (near Rovigno) for a short while and cheese was definitely not a major player. Oddly, at many places, Monte Veronese was used like butter. And the Asiago did not taste a think like US made.

    That means the bell of church: It consists of striking the bell three times (symbolizing the triple Ave Maria) and a longer ringing. Three times a day (usually at 6 a.m. in the morning, at 12 p.m. at noon and at 6 p.m. in the evening) the Angelus ringing calls believers to pray for the “Angel of the Lord.”

    The cheese factory where I live in oregon went to bergamo Italy and won grand champion for their rogue river blue cheese, so what I'm saying is yall need to come check it out, there's also a chocolate factory attached to the creamery
