  • Nick did a pretty good job with his pasta in the Parmigiano Reggiano wheel.
    He made fresh pasta from scratch and I have to say the recipe wasn't too bad. I'd just change two or three things about his recipe, but all in all Bravo Nick!

    You know, Vincenzo, I've had, "Cheese Wheel Alfredo." They made it with just the pasta water and the hot pasta, in the hollowed out rind of the Parmaggiano Regiano. Nothing else. I don't even remember if they used any butter. But it didn't matter - it was the best Alfredo I've ever had in my life! No heavy cream, but still tasted like cream.
    I have no clue what Nick was doing. And with a last name like Di Giovanni? "He make his ancestors cry," as Uncle Roger would say!

      He had a really bizarre technique and I wasn't even that impressed. Indeed, our Italian ancestors are knocking on their graves now. Hahaha!

    I learned the secret of italian cooking by watching these videos.
    Less amount of ingredients, but high quality grade ingredients.
    That is the key to italian cooking.

      If the pasta portion had been smaller, he'd have a smaller congealed mass of broken cheese sauce. No hot pasta or hot pasta water, just a mediocre heavy cream mornay with garlic. That isn't going to save this mess, just make it look a bit less disappointing, like that mountain of shredded parmigianno he topped it with. If there's one good thing about Nick's technique, it's that he knows that cheese is the best product to use when hiding your shame.

    The mouse was very smart - stick to the cheese, and avoid the pasta. What a terrible waste of a fine Parmigiano wheel. Nice review Vincenzo 👍

    Yes, overcooked fresh pasta, dry and not highlighting the amazing Parma wheel. Should have been a celebration of the Parma with perfectly cooked fresh pasta. Chives doesn’t add anything. Vincenzo your observations 100% right on.

      Most restaurants use a grana padana cheese wheel
      Since the parm wheel is double the cost and it’s pretty much the same effect on the pasta

    Is #5 the thickest or the honest setting? My kids bought me an adapter for pasta for the kitchenaid but I have 0 idea how to use it, I used it once and gave up

      It depends on the machine, but if you look down at the wheels you can see when they are closer together as you change the setting.

    One of the reasons the pasta broke was the lack of egg whites. Whites are what keeps it together!
    When you replace it with oil, you get something like roux. It breaks! Obviously...

    I don’t understand cheese wheel from a sanitary pov. How do you clean it and prevent moulding between use?

      You are right. It will get mouldy if not use. The wheel its perfect for parties or for a restaurant who will use it everyday. It is not recommended to get a cheese wheel for everyday use

    0:28 Honestly Vincenzo, that actually called for the F Bomb - like "WHAT THE F!!!!" I promise you would have been forgiven for that. 🤣 But I don't get ruining a good wheel of cheese for that dish. I can promise you that the taste and texture is indistinguishable from just adding the appropriate amount of cheese to the saute pan. EDIT: regarding the rat on the cheese, I wouldn't let Nick bring me an unopened can of soup if I was starving. Not only is that unhygienic, it's disgusting. I would never eat anything he prepared.

    Can somebody please explain what is supposed to happen to the cheese wheel after that pasta gets eaten? Is it to be thrown away? Or scrape the surface and then use as a normal cheese? It must still be several kilograms of cheese there...

    Long af pasta is historical. Lady and the Tramp (1955) where the two dogs eat the same noodle from 1 plate and end up kissing, is emblematic of this long pasta thing -- maybe shorter pasta is a modern trend since it's easier to package! :D Edit: Rather than chives, maybe some ripped up basil would be better. I like chives, but basil adds the same green, with a fresher less onion/garlicy addition especially since the sauce already included lots of pressed garlic.

    Qui in Piemonte è famosa la pasta "30 tuorli" usata per fare i tajarin e i plin. Per 30 tuorli si intende che l'impasto prevede per 1 kg di farina 30 tuorli di uova medie, preferibilmente di quelle buone del contadino, ma comunque la proporzione è quella. Si ottiene un impasto sodo, saporito, gustoso, perfetto per accogliere una generosa dose di burro fuso e una bella grattata di tartufo fresco. Eh già, il tartufo ama l'uovo, ci sta da dieci.

    I have money, and I ALWAYS have a large wedge of real (D.O.P) Parmigiano Reggiano in my fridge, but I don’t know how long I would be able to buy food if I spent 1000.00 just to hold my pasta!? I guess I could just hop into my Ferrari and go get another one…wait. I have a Toyota) 😢👍🏼❤️

    Just because there’s a movie called ratatouille where a rat helps a chef cook doesn’t mean we can bring the rodents into the kitchen and put it on our food. If Nick wanted to feed his hamster some of that cheese why didn’t he just some from the hole he scraped out and give some to the hamster on the side or simply bring the cheese to where he keeps the hamster. Would have been much better and much cleaner.

      I don’t hate him, criticism is not hate. I just don’t think it is right to treat high quality materials and products that way. A mouse is disgusting. They sleep and walk through their own excrement. How do I know? I dated a girl who owned rats and Guinea pigs. Same things basically. That’s just how rodents are. He’s also not just some guy on the internet. He’s a professional chef. He is going to be held to a higher standard of conduct concerning food preparation and technique. Putting a rodent that can urinate or crap at almost any time, anywhere, on your food is not what people want from professional chefs. If he was going to have to cut it off, why not just cut off a piece for the mouse to eat at the start? It’s still wasting food, but it would have at least been sanitary.

    he made a great big knot of pasta, too long too strained, and he made a garlic besciamella. Why do they have to complicate Italian food when it is so simple, and what's with the rat on the wheel? No need to add grated parmigiano in that sauce the goal of the wheel is to scrape it from the sides! And look how he holds the fork! Like a shovel!!
