    It’s crazy! The classic (and proper) Carbonara dish is so much simpler than doing it the wrong way! These other cooks are making things complicated and still end up with a subpar dish! Keep it simple and you’ve got it!

    I found guanciale and even though it was so expensive where I am, I’ve never been so excited. Made carbonara and amatriciana. The best

      @@vincenzosplate I can’t say with the amatriciana since I used guanciale from the start. For the carbonara, I noticed it seemed there was more flavor and the texture of the meat was better. I mean I also used cheap pancetta the first time so there’s that. But I made this for my friend and now he loves guanciale and carbonara is his favorite pasta dish and pecorino became my favorite cheese. Never even heard of pecorino before this channel
      On a side note, the very first time I heard of carbonara, I told him I wanted to make it because of your videos, so he pulled up a recipe for carbonara from the internet: bacon, parsley, and creme. I said no.

      I have never found guanciale here. There's literally no demand for it, yet so many people are eating carbonara. I wonder why? (do they make it with bacon or cream?)
      I just try to use the best pancetta I can find, but it still requires a 1 hour drive in the car to buy it.

    I think more than 50% people think that carbonara is pasta in somewhat creamy sauce, no matter how it become creamy.

      as long as these "chefs" continue to make these dishes and pass them off as "carbonara", this belief among people will remain over and over again

      From all I have heard & seen about Bucco di peppos,I'm shocked people pay for this food & that it's still operating, that whole dish looked dead, not just the pasta...Thank God for nonna Gina, who I have loved for years, she's the absolute sweetest, even with her broken English & italian & her cooking is amazing!

    your recipe with the whole eggs is the best! Only thing I changed in yours is half parm and half pecorino as the first time I made it with just pecorino i found it too salty for my liking.

      Why do people think Italian food has cream and garlic in everything? It couldn’t be farther from the truth. Cream is barely used in Italy, if at all.
      Italian food is about finesse, about touch and love. This is garbage food in these videos. It’s an insult to Italian food.

    Remind me of last summer on vacation, I go into an "Italian restaurant" to get spaghetti carbonara.
    I ask the waitress, there are the real ones, not anything with onions, cream or whatever? Yes, she says.
    Are you sure I ask? Wait I go ask the chef to be sure.
    Comes back tell me he puts cream in it...
    I left the restaurant.

    I was at an italian restaurant in london and i saw carbonara in the menu but not cacio e pepe so i tried to make a special request to the chef... only to be told they do not have the ingredients for cacio e pepe, only for carbonara 🤦‍♂️

    I find a perverse pleasure in watching you react to these abysmal videos. I can feel you dying inside as each minute goes by, but your typically emotional Italian reaction is heartwarming and highly entertaining. Thank you for sharing these videos, as well as providing *actual* Italian recipes, which invariably involve a lot less ingredients, all of which are super fresh, and very simple and straightforward.     La cosa che fa più ridere è che in tutto quel mappazzone di prosciutto, aglio, pollo, panna e contropanna ha aggiunto 12 piselli sperando che potessero cambiare qualcosa😂😂.

    As you know Vincenzo, I'm an American and I've been to Olive Garden, Bucca di Beppo, and countless other "Italian" restaurants the USA. I didn't know that chicken doesn't go in a Carbonera, or in an Alfredo, or in ANY other true Italian dish. As far as I knew, Chicken Carbonara or Chicken Alfredo made with cream, or with many recipes, Philadelphia, is an authentic Italian dish. And you also can't have an authentic Italian recipe without lots of garlic. Thank you for opening my eyes. I'm making my first Ragu alla Bolognese this week (using Pasta Grammar's instructions) and I can't wait to try it! Oh, and I'd love to see you in Dasa in Sept with Harper and Eva!

    I've eaten at a Buca di Beppo (North Carolina, US) before and it's so much fun. It's a family style restaurant. But since I've learned to cook pretty good (if I do say so myself) the food is..... fine. It's more about the atmosphere.

    Restaurants love to soak their pasta in cream - almost soup like.
    Since my single worst restaurant experience ever was at a Buca di Beppo, I was sure it would win... But that 1/4 of sugar in the last one made me gag... Worst goes to Friend Cheap Menu by a mile.

      I'm sorry to hear about your bad experience at Buca di Beppo. It's true that some restaurants tend to overdo it with the cream sauce, making the pasta more like soup. As for the sugar in the last recipe, that can definitely be off-putting, especially if you're expecting a savory dish.
      I agree with you that the Friend Cheap Menu recipe seems to be the worst offender overall, with its excessive use of artificial ingredients and lack of balance in flavor. It's always disappointing when a restaurant or recipe falls short of expectations, but hopefully there are plenty of other great dining experiences out there to enjoy.

    That's the way its' served in CA.,basically Alfredo with pork. I really only found out about Italian food in the last 3 years although. When I toured in Europe I did notice the Italian food was nothing like what I was used to. There was two Italian restaurants in Los Angeles that I ate at and the food was completely different ,now I know why, they served authentic Italian cuisine.

    Hi Vincenzo, really funny thing, I was watching your last video just before I looked at yours. I am/was an Italian cook by marriage (lol). I had made it a few times under my mother-in-law's instructions. Many, many years later my adult children asked me to make it for old times sake. Hence me watching buon-apetito video. When I switched to your video here, I got so sick to my stomach, I fast forwarded most of them till the last one because I just COULD NOT WATCH IT! Why in heavens do these people say "REAL" carbonara when it obviously NOT! Should be banned! Love your channel.

    I'd like to learn how to make guanciale and pancetta at home because we don't have those in the philippines. Someone said to me there's pancetta but there's only a few store that actually sell it and it's usually far away. So we only use bacon. 👍🙂🙂

    Looking forward to that video on how to make guanciale at home. There is no way to find it in my country, and the only restaurant that made carbonara decently (with pancetta) here, sadly closed :(

      Yes, this will be awesome! Poor you, that the one restaurant had to close, that made you happy. Maybe you re-open it some day? ;) I live in Europe, close to Italy but I have never seen guanciale here. The best things, Italians keep for themselves it seems ;) Could order it of course, but I want to taste and smell it before I buy it..
