HOW TO MAKE SPAGHETTI CARBONARA
INGREDIENTS:
5L Water
Pinch rock salt
300g/10 oz Spaghetti (or Spaghettoni/Rigatoni/Paccheri)
150g/5.3 oz Guanciale
200g (2 cups) Pecorino cheese
4 eggs
Pepper
UTENSILS:
Large pot for cooking pasta
Chopping Board
Knife
Large fry pan
Mixing bowl
Fork
Ladle
Long set of tongs
METHOD:
1. Spaghetti carbonara takes just a short time to make so first up, boil the water to cook your pasta in a large pot.
2. Cook the pasta according to the packet instructions when it comes to time, making sure the pasta is al dente.
3. Cut the skin off the guanciale (making sure to leave the peppery/seasoned crust), then slice it into thin strips.
4. Put the large fry pan on the stove at a low to medium heat. For the spaghetti carbonara recipe to be just right, add the guanciale into the pan, let it cook very slowly and it will create its own delicious oil.
5. Let the guanciale simmer and crisp up very gently.
6. Get your mixing bowl and add 4 eggs, then whisk them really well.
7. Next, add the pecorino cheese to make this spaghetti carbonara recipe, and lots of pepper before mixing it together really well. This will create a scrumptious cream for you to add to your pasta.
8. Once the pasta has boiled to your preferred taste, using a set of tongs, take out the pasta from the boiling water and add it straight to the pan, making sure small drops of the water mix into the pan too.
9. Turn off the cook top, so the pasta and guanciale stop cooking.
10. Next, using the ladle, get a full scoop of pasta water out of the pot and add it to the egg and cheese cream, then mix through well using a fork.
VINCENZO’S PLATE TIP: The pasta water is the KEY to making the Spaghetti Carbonara recipe PERFECTLY! Don’t miss this step!! It will help to combine all the ingredients well and they will stick to the pasta better.
11. Now, turn the cook top back on a low heat, add some pasta water to the pan, and now, pour the cream over the top, then mix it through using your tongs - be gentle, but fast! Let it cook through but don’t let the eggs scramble or you will end up with a frittata!
12. Keep mixing the cream through until it just starts to thicken, stir is through and then serve.

It's down to where they came from. Jamie was trained by an excellent traditional Italian chef. Gordon trained by a French chef. Completely different worlds and core principles. The Chinese think they cook the best rice, the Indians think the Chinese cook rice terrible, and vice versa.

@Zak Maslen Indeed. I only ever went to the Neals Yard place, but around the time Jamie would have been cheffing in the kitchen there (learning the Carbonara way no doubt). It was the first time I was able to afford to go to a high end kind of place and it left a lasting impression on me.

I like Gennaro’s recipe. Only thing I ever changed was tempering the eggs first with the pasta water just before mixing in with the pasta. Really does wonders to stop them from scrambling.

Jamie Oliver’s Chili Jam In fried rice is like MSG in Carbonara
Interesting. So Jamie Oliver can cook Italian food quite well. He can't cook Asian food at all (including Thai, Japanese, and Indian at least), but that's actually a separate issue. Clearly, a chef who's great at one cuisine can be terrible at another.
Yes, that is true, learning different cuisines is like being back in elementary, and you're learning the history of other cultures. It might be challenging to follow through because some cultures take their food seriously as it is part of their traditions and passed down from generation to generation. That is why sometimes some people get offended if we make mistakes in cooking their cuisine because they also take pride in their cooking.
It all comes down to training. Jamie's mentors, Antonio Carluccio and Gennaro Contaldo, were Italian chefs.
I've found that the perfect amount of cheese to eggs for the "cream" is 30g cheese to 1 egg. Comes beautiful and creamy as that cheese emulsifies...every time. Thank you Vincenzo!

It's a classic for a reason :) Try making your own pasta! THEN you will understand Italian food. You cannot substitute homemade pasta for dried store-bought pasta. That's when you'll understand why pasta with a little sage, olive oil, sea salt, fresh ground pepper and grated romano is the best dish in the universe :) (in my opinion anyway)

Guess what I made...Carbonara at 5 am in the morning to eat for college. I made it exactly how you say to do it in the video and I even bought extra virgins olive oil, and the cheeses you mentioned! I put the dish down on my desk and...I check youtube and..this video comes into my recommendations! It took me...5-7 tries to get it just right but when I got the recipe and creaminess correct with the authentic Italian method, the taste was divine. Never going back to "Americanized" version here in california hahaha. I cant eat pork so I didnt use pig cheek but I added more pecorino to make up for it

Personalmente se avessi pepato il guanciale come ha fatto lui poi forse non lo avrei messo nella pasta per lasciare la "botta" di pepe localizzata e non rischiare di anestetizzare il spore del piatto... Ma questo solo perché mi dispiacerebbe preparare una bella carbonara e poi sbagliare la dose di pepe... 😂

J.Oliver è senz’altro un ottimo chef, naturalmente non italiano quindi non possiamo aspettarci una carbonara perfetta, ma il risultato è sicuramente migliore di quello del suo collega Ramsey 😁
Comunque sia, se provi gli spaghetti con le polpette fammi sapere poi cosa ne pensi 😉 e se tuo figlio approva!

@@vincenzosplate spaghetti, pecorino Romano, eggs, pasta water.... I’ve used pancetta and bacon. I’m going to have to do it with guanciale next time. After watching your video from hotel Marcella royal with Paola, I had to double the amount of pecorino and now use the whole egg. Basically I use the same recipe now. So good! Thank you! 🇨🇦

Thanks to you Vincenzo, I have made carbonara about 10 times now this year and I think this is the best I've came up with:
- Guanciale
- 2 whole eggs (large) + 1 egg yolk
- Pecorino + parmagiano mixed
- 2 teaspoon salt into pasta water
- Spaghetti or Farfalle for pasta (yes, farfalle!)
- Fresh black pepper or as I've recently discovered, mixed peppers of black and white (try to get it 70% black, 30% white).
- Oregano

the only thing I would not add is the oregano, which personally doesn't get it right with the recipe!

What is your opinion on adding mushrooms to make it a vegan option, or should I consider making my own Vegan meat alternative that is seasoned like the guanciale? I've used a vegan parmesan that is close to the real stuff and I used Just Egg for the eggs, but I'm still on the fence for what to do with the "meat".
I've seen a lot of vegeritarian versions of carboanra, and most add zucchini instead of meat, so I think it's perhaps the best option!
I think you have to try to find out what's better 😋
