SUBBIE SUPPER - Submitted by Jay
TACO TATER TOT CASSEROLE
1 lb ground beef
1 onion sliced
2 garlic cloves, minced
1 packet taco seasoning mix
1 cup enchilada sauce divided
1.5 cups frozen corn
1.5 cups bell pepper red, yellow, green, diced 12 oz. Black beans drained
3 cups shredded cheddar cheese divided
16 oz. Frozen tater tots
1/4 cup salsa
Additional Toppings:
diced tomatoes, shredded lettuce, sour cream, avocado slices.
1)Preheat oven 400 F
2)Brown ground beef, onion, & garlic over medium high until no pink remains. Drain any fat.
3)Stir in taco seasoning, 1/2 cup water, 2/3 cup enchilada sauce, corn, bell peppers & beans.
4)Cook until thickened (about 5 min)
5)Pour beef mixture into 9x13 pan.
Sprinkle w/1.5 cups cheese and arrange tots neatly on top.
6)Bake 30 min. Combine salsa & remaining 1/3 cup enchilada sauce. Spread over tater tots & top w/ remaining cheese.
7)Bake an additional 10 min or until cheese is melted & bubbly.
8)Serve w/desired toppings.

I love how you substitute other things when you're out of or low on an ingredient and show how to use something else in its place. My daughter is 25 years old and lives on her own. She's finally started cooking and can easily follow your recipes. I'm constantly getting calls from her when she's grocery shopping and can't find an item. I get to guide her around the grocery store while we chat. She watched me cook and helped me shop while growing up but either didn't pay attention or just wants to talk while she's roaming the aisles. I wouldn't trade anything for those calls and love that she's eager to learn. Also, I want to add that it's so refreshing to see a couple on social media supporting each other and showing what a healthy relationship looks like. Our younger generation needs to see more couples who are true friends, can laugh together and let their love shine through. Kudos to you both!!

I think sundried tomatoes would be an amazing addition to the gnocchi dish!
The most awesome tool for a small garden is called an Earth Box. I had 5 of them on my deck when I lived in a townhouse in NoVA. I grew tomatoes, corn, cucumbers, lettuce and had an incredible harvest throughout the growing season. It was so easy. Literally all I had to do was put the boxes together, put in the soil and follow the planting direction for whatever you're planting. Water accordingly...it's all in the directions. I have a brown thumb and was able to do this. If I can do it, anyone can do it.

Fun fact, if you heat up that gray skillet and put little tiny piles of that grated parmesan cheese, they melt down and then after you remove them and they cool, they become like a cheese cracker

I made this for the first time last night and was blown away! I've never had gnocchi before and wasn't sure how I felt about using lemon in an entrée, but it worked out beautifully. I can't wait to try more recipes. The hardest part is figuring out which one to do next.

Mandy,I have a little tip for you,when using the rasp grater to zest lemon,limes,and oranges,rub the grater on the fruit,that way you can see when you reach the pith,and also the zest collects on the back of the grater.when you rub the fruit on the grater you need to keep lifting the fruit to see if you have got to the pith yet.I have grated so much fruit for my job,I had to find the quickest way.Hope the whole family is feeling better.😊

I have a very rare cancer and 5th stage kidney disease so I had to make myself eat, but after watching you I am starting to feel hungry again and I am even gaining a little weight back, win win all the way 🎉❤

Mandy, if you like Parmesan cheese, you should try it with a mixture of honey and red pepper flakes, like a dipping sauce. Flake off portions of the Parmesan cheese into chunks, and dip them into the honey/red pepper flake mixture and pop into your mouth for a wonderful salty/sweet/spicy mix. I didn't invent this recipe, but I always have this on hand. Perfect for a picnic or a quick treat.

The lemon chicken and gnocchi is now a go to meal! I'm lucky our grocery store has lemon herb thin chicken breasts in the butcher section. So very lemony and seasoned! Add more garlic and cheese and so easy!
I can suggest using a little flour or cornstarch to your bowl of cheese it will help separate from clumping. Just sprinkle a little and fluff the cheese. It really works.

The taco tater tot casserole, you can substitute ground pork with the ground beef and make it tastier, I think. It would be a great update for the recipe, or turkey if you want a leaner meat.

I did this recipe (the Lemon chicken gnocchi) with bone in Iowa pork chops. Incredible! So good, juicy, tender and delicious. I like it even better with pork than with chicken.

These are all great recipes to half. It’s just my husband and myself so I try to cook smaller portions. Sometimes hard to adjust recipes and we have way too many leftovers. These are worth a try. Thank you for the video and please tell Steven to get well 🙏🏼🙏🏼

I feel your pain Steven! I went to the doctor yesterday. One side of my tonsils was so swollen that side of my throat was blocked. The tendons in my neck on that side was swollen and tight! I’ve been in a mess. I got a steroid shot and today my face is on fire. I have type II diabetes and steroids tend to make me feel this way. It goes away after a day or two but man does it help with inflammation. I hope you feel better soon. At least you could taste your food. Mandy’s doing a good job with her seasoning of the food!

Side of broccoli dish we love and very simple. Roast broccoli in the oven with garlic infused olive oil that I make with squeeze of lemon and parmesan cheese. That garlic lemon parmesan combination is so good.

Yes the last 3 months it's been off-and-on bad they have helped scriptions left and right down here you have asthma or heart issues any type of bad Health they tell you to stay in so yes off and on for about 3 months now today is one of those days we have warnings until Friday afternoon impossible heavy rain in Bucks County where I live for the next couple days we have had roads closed left and right the last 3 days good luck and feel free to make any of my other recipes that I sent you it makes me feel proud that other people love my cooking and or baking I'm still working on some other ones to send you

Wowie! Made the lemon chicken gnocchi and it's awesome! This is the 2nd recipe I've of yours (chicken stuffing casserole )and they are both winners! I usually tweak every recipe to my liking, but I stuck to this one and it's perfect as is. Thank you
I am new on here and I made the lemon pepper chicken gnocchi. Oh my goodness it is so delicious. My kids even like it. Will be making this all the time.
Next time you buy a block of parmigiana Reggie cut off a few pieces let it come to room temperature. Get some good crusty Italian bread. Put a little EVOO in a small dish with pepper and salt even hot pepper flakes. Dip the bread a little and eat it with chunk of the cheese eat with manzanilla and Kalamata olives the best snack ever. that gnocchi made the list looks amazing
We eat olive oil with balsamic and either Z'Atar or Dukkah with crusty bread. Sooooo yummy. But your parm idea sounds delicious too! Maybe with some Aleppo added ,😋
I love parmasan cheese especially sliced super thin on top of granny smilth apple slices. The sweet the tart and salty just a perfect combo.

Hi Mandy, Love your show and my husband watches with me. I see you use dried herbs at times and just wanted to let you know how to get the best flavor from them. Put the herbs in the palm of your hand and with your other hand press and rub the herbs with your fingers and this releases their oils. hence much better flavor.
We loved the Sweet and Sour dish.
Normally the gnocchi is put in boiling water until they start floating, then u drain, then add a bit of butter to a pan and lightly fry them so they aren't mush. Some people do only one side or both..but you get the crunch side and the soft side as well. I love love watching your videos. Thank you so much for all your effort!

Hey Mandie and " Commentater"..lol..the tater tot taco casserole looks yummmmmy...cant wait to try it. Curious on your oven- why do you keep the top rack high so you have to squeeze your casserole dishes onto the bottom rack?
Lol. I keep mine on the middle spot and put the lower rack all the way to the bottom. Less chance of burning my hands- been there,done that.

I agree about parmesan cheese!! I use it in a lot of recipes and snack as I cook!! I buy a large bag from Costco and it's great because there is NO cellulose on the cheese, it's just shredded parm, no fillers.

I had just the right amount of ingredients to make this before making a grocery trip this weekend. You gave me a reason to use the heavy cream I had in the fridge- it was exactly what the recipe needed. You were right, it was definitely restaurant quality. So, so good. My 3 year old daughter loves gnocchi, she loved it as we all did. I used the spinach gnocchi from Aldi, and it was so good some of us had the leftovers for breakfast this morning. Going into our rotation- thank you for sharing it! ❤
