How To Make New Orleans style SEAFOOD GUMBO!!!

New Orleans Style Seafood Gumbo Recipe:
1c Shrimp
1c Crawfish tails
4 small Blue Crabs (cleaned)
3/4c Andouille Sausage
1 small Onion
1 stick of Celery
1 Green Bell Pepper
1/2 c Okra
1/2 c diced Tomatoes
2 tbsp. Minced Garlic
2 Bay Leaves
Cajun Seasoning
Garlic powder
Salt & Pepper
1 tsp. Gumbo File
1 c Cooking Oil (veg, canola, corn etc.)
1 1/4 c Flour
32 oz. Seafood or Chicken broth
Instructions:
In a food processor, add your onions, celery and bell pepper, pulse 2-3 times and set aside for later. In a sauté pan, bring 1 tbsp. of oil to a medium heat. Add in the Okra and Tomatoes and let cook for about 5-6 minutes. (This will help to remove the slimy texture of the okra). Remove and set aside.
Add in your Andouille sausage to the same pan and cook until brown on both sides. Once sausage is brown remove and set aside.
In a large pot, turn heat to medium low. Add in a cup of cooking oil. Let the oil heat up for a minute and then add the 1 & 1/4 c of flour. This will create your roux. Make sure to keep your eye on the roux and stir constantly so it doesn’t burn. You want your roux to get as dark as possible without burning. (This may take up to about 45 mins).
Once your roux has gotten to a dark chocolate color. Add a cup of the celery, onion and bell pepper mixture and stir quickly. (This will make the roux a little darker but don’t worry it’s not burnt). Add your okra, tomatoes and sausage and mix well.
Next you will add your seafood or chicken broth to the pot and whisk until well incorporated. Sprinkle 1 tbsp. of creole seasoning, garlic powder, salt & pepper. Add minced garlic and 2 bay leaves. Once your pot has come to a boil, add 1 tsp. of gumbo file, lower your heat to a simmer and let cook for about an hour. (Impurities will float to the top of your pot as the gumbo cooks so make sure to remove with a spoon or ladle)
Once the gumbo is almost done. Taste to see if you need to add more seasoning. Add in your seafood and let cook for about 5-7 more minutes. (I like to let my gumbo sit on the lowest heat setting for a little longer to let the seafood soak up all the flavor of the gumbo.)
Serve over a scoop of rice and ENJOY!

After watching literally dozens of videos of "gumbo" recipes it's nice to finally see someone who actually knows what they're doing. Especially a good seafood gumbo without chicken and andouille. My wife and I have been binge watching gumbo recipes for about an hour and laughing our asses off at what some people try to pass off as gumbo. I saw a six minute video and was like, "This is gonna be a joke." but we just sat there being like, damn! Homegirl knows her shit! Seafood or not, this is easily in the top 3 best gumbo videos on the internet. I'm not gonna lie, when we saw the tomatoes and okra we were a little skeptical but once we saw how you incorporated it into the recipe we knew you were the real deal. Thanks for listing the ingredients and recipe in the description too. If y'all want to know how we do it in New Orleans, look no further. This is for true on point, baby.
