So just in case anyone doesn't have a tagine yet but would still love to try this recipe: I just cooked this in a simple coated pan with a glass cover from Ikea. It worked absolutely fine. I will still buy myself a tagine dish, but it worked perfectly well and the food was DELICIOUS! The meat was sooo tender and all the spices, herbs and the yoghurt are just so fine together..I cooks it also 2,5 hours, I set the stove to a quite low level. Jamie, you're a genius!
Believe me with tagine it's so much better and taster!

I think a Dutch oven would work too. But I just bought myself a Tagine. This is why I am here, watching tagine recipes 🤤
@@sarahalotaibi1230 oh I bet it is. But I don't want another thing in my kitchen 😅 but of you have the space, I'm sure it is worth it 😋
I JUST got home from vacay in Marrakech this weekend and bought myself a tagine while I was there. HOW DID YOU KNOW JAMIE. HOW. This is the only YT channel I come back and watch every week. Bless you.
This was simply fantastic. The awesome part of this recipe (and most cooking in general) is that you can play around with the ingredients, qtys, all that good stuff and it still will turn out great. Don't be afraid of this recipe. Pretty much fool proof!
I'm moroccan & i know what is grand-ma's Tagine & your way of make it is PERFECT and it seems SO DELICIOUS
Thank you Jamie and BIG UP
Are you serious ?? It's a nice try by an englishman, but it's very far from being as good as a real moroccan tagine
Jadido7
I agree. No morrocan adds yoghurt on top of a tagine
Seriously people ? It's his recipe. He never said he got it from the streets of Casablanca. Yeesh.

Okey, fair enough, you're right .... But basically I was just reponding to Zahrae who claimed this looks like a perfect moroccan tagine
Very poorly seasoned lamb
That's gotta be cooked. I have to try that. At the moment using colman sachets for cooking instructions. But Next going to be cooking Jamie Oliver ingredients. I hate cooking. My cooking is never like other peoples. But this Jamie Oliver channel is going to be a big help. Glad you are on youtube.
I love moroccan food. Going to try this one.
Thanks Jamie!
I cooked a Tangia (quite similar to Tagine) myself inspired by this video. It's super easy to make it at home. The taste is unique, a real impression for those who never tried North African food.
Long live Morocco and thx Jamie for nailing a traditional morrocan dish.
Jamie Oliver --- Wed.,Dec.2,2015 - Here in L. A., Calif. I went looking for Lamb and these people seems do not consume lamb at all. Finally I found in a market in Glendale, but they did have legs of lambs, to me, they are big and I bought only 2. that was probably one month ago or one and a half month ago. they are in the fridge, but I don't know how to do it. I am a widower, 4 days ago I had my birthday, I am 75 years old now. my wife passed away 6 years ago and she was a pretty good cook, I would say excellent cook she was. Our sons got married and have children and live in other cities far away, I live alone and I am learning how to cook. But how to prepare those legs of lamb? Your lamb shanks that you prepared look to me delicious after you had them cooked I exclaimed
Oh! This guy is a genius when cooking!!!. Sicerely, your friend and friend of all. Merry Christmas and healthy and prosperous and happy New Year 2013.
+ANDADOLAGER Hey this is probably too late and they will have gone off, but I like to do Lamb leg roasts sometimes for Sunday dinners. My Mum isn't around either so I cook for me and my Dad. Just stick it in the oven with some cranberry juice, salt and pepper, and cook until tender (depends on size). Then serve it with mint sauce. It'll be a lot of food for one, but I use the leftovers in sandwiches. Hope that's a little bit helpful! :)
Mouthwatering....I need to get myself a tagine. Thanks for this lovely recipe!
in the uk the whole plant including the leaves, is called coriander, in the US the leaves are called cilantro, and the seeds coriander
Wow. Morrocan love right there; the Tagine can't really be beaten
What a wonderful dish!
This made me wish to get a tagine and I will : ) Just added to my le creuset wishlist...
Thank you! Love your channel!
you make it so straightforward. no fuss i love it
I'll try this recipe. Thank you!
Yes, classic old home/ setting - I used to love that series
As always, a pleasure watching you cook.
Made this over the weekend, absolutely amazing!
I love seeing this man cook! I should start learning!
On the Wikipedia page for the tagine, they suggest using a "diffuser", a piece of aluminium, between the gas and the tagine, so it should be possible to use a circular piece of iron or steel similarly to transfer the heat on an induction cooker.
Back in the days when Jamie Oliver could still get away with saying Ras El Hanout and Garam Masala are the same thing. I'm sure they both make it taste great though!
Yum. Definitely my favourite meat and one of my favourite cuts too.
Good job, Jamie, with that lamb shank! It look absolutely beautiful. Amazing work!
Hope Jamie won't mind me answering this one, but I have actually done something similar to this in the oven using a casserole dish (with the lid on too). It turned out beautiful and my Hubby loved it. If you are cooking for more people, I'm sure you can do it with those big deep oven pans and put tin foil on top as the lid, if it doesn't have a lid. Hope this helps you out. Lee xx
I have to make it........looks delicious
My Grandmother use to make her yougurt and Syrian bread from the oven she wasLebanese
Made this with my new Tagine. So good.
I love watching your videos even though i dont cook, cause it looks soo tasty and i looove that the videos are full of your passion for cooking=)
Hi Jamie!!! I love all your lamb recipes. I am a very big meatlover and lamb is my favorite peice of meat!!! Unfortunately, lamb is very expensive here....
Your dish seemed so tasty. My father is Iranian and they have the same tradition i think.... eating yoghurt with meats and rice and stuff.... I think so.... Me, I am more Swedish. I love good old fashioned soured milk served with fruits, granola or corn flakes. But I love stuff like tzatziki and stuff. You can do a lot of tasty stuff with for exmple greek yoghurt.
Thanks for sharing this amazing idea of a lamb dish, inspired by North African food!! I would love to try it one day!!!
Big love, from me in Sweden.
yummy I need this in my life! Just getting over a cold so this would be ideal :)
I'm hungry now :) thanks Jamie that looked gorgeous and delish!
Shanks alot for the great video today Jamie!
At 2:48 - 2:49, it looks like Jamie saw something unusual in that tagine.
a dead insect cooked in the juices
Fantastic recipe - they always are...thankyou Mr Oliver:)
I remember for my anniversary my husband took me to a place called comtoir in Manchester and I had a lamb maqlooba tagine and it was amazing and so filling and looked exactly how Jamie made it :)
Why am I obsessed with everything about Jamie ! 😗🤔😀
Just made it. Amazing!!!
Just made this. AMAZING!
Wonderful dish! But what other pot can I use to make this?
Thanks a lot for answering :)
I guess I'll just have to try it then.
It should be quite fun to know what to do but not to know how it is going to turn out :) (for me thats the fun with recepies)
Hmm that look amazing!! Really great recipe.. Love it!
My mouth is literally watering.
I love you Jamie Oliver!
So amazing.!!! Jamie, could you please do a recipe of Turkish "Baklava"? :) I would be so nice to do it, because always, when I make things watching you, everything comes out perfectly :)
looks amazing!!
Delicious. Thank you Chef.
Looks delicious!
I've seen really good Moroccan chefs using tagines to create unbelievable dishes. They also give a good explanation as to why a tagine works so well. Whenever I now see someone cook with a tagine it makes everything else they cook (without a tagine) afterwards look like crap.
Fantastic dish 😍
Yum! Drooling here, must buy a Tagine!
the meat looks juicy! should i boil it with just water?
great! impressive! thanks, Jamie
I don’t own a tajine so I made this in a Dutch oven and used figs instead of apricot... Turned out really tasty, too!
I did something similar in an earthen pot I found randomly in a store. It really is delicious!
What liquid is are the shanks boiling in?
looks so yummy
that looks awesome!
Hi our idol
Please I want ask you are you cook it in stove or in oven?
And can I use date ?
I've seen within markets such as Marrakech Markets that workers bring meals stored in these large ceramic or clay jugs (not precooked just jammed in raw with water) on their way to work. They give them to a particular stall owner to warm them up for hours until lunchtime (free of charge). They then come back for their lunch after hours of cooking.
If these people can braise in a bloody jug right in the heart of tagine territory then you can cook with a bloody frypan.
Nice dish Jamie :)
But a question... is there a way to do this on an induction cooker?
I mean the Tangine won't work but can I put it on a pan without having to worry about a dissaster?
I've been informed that Garam Masala is a substitute for Ras al Hanout - and also, already contains cumin and coriander, so no need to add extra - unless you want extra
Jamie makes me want to give a try to eat lamb. Honestly, I hate the idea to eat lamb before. A former vegetarian.
That my brother was a Bad Ass cook.my EX's Grandmother made some killer ass lamb shanks Itallian style and they were totally awesome.wish I would have got her recipe, but now I have yours and this a bit different ,but I can see all the Love and the flavors you put into it..Totally Awesome, my Girl would totally Love this.what is that special pot called and where can I get one ??? this a must do for me ..Thank You..thumbs up and subscribed,Iam Cris
Cris Workizer google Tagine. You'll be able to find them on eBay, Amazon etc. Definitely worth it!
Thank you brother...
is it weird i find these kinda cooking videos really cozy?
Omg I love it!!! More like this please! Ps great show!
so tender, my mouth is watering!!
Garam masala is South Asian, it's not the same as North African ras el hanout! Dunno why he said that. Food looks tasty anyway, I love Jamie :-)
mmmm que rica receta, la carne se ve suavecita ;).
You can get heirloom tomatoes in the grocery store nowadays where I am from, and my g/f's mother grows them in her backyard in the suburbs.
:) simply fantastic , thanks .....
He gets those beautiful tomatoes from his garden if Im not mistaken. Hope that helps. Lee x
Cool
Maybe it could be done in the oven? If the tagine is not oven proof (but it should be, since you can pop in on the cooker with no problems at all), you can probably use a clay roaster.
Delicious food, concrete and tasty
Would this transfer well over to a crock pot or a roaster pan of some sort?
Kopa_Malphas Yes of course (but the tagine got a special flavour it adds to food)
We want to see Jamie more in RUclips
If you have a dutch over, that's probably your best alternative to a Tangine.
It's not being poncey, love it xx
looks so good x
Brilliant
Nice! Thanks for the trick with pomegranate! But why garlic with a skin on? I guess my garlic tool won't make it this way )
2:18 where's the bit of stock?
jamie.. can u use a slow cooker for this?
Do we need to marinate Shank for overnight or we can just season it and cook ???
Instead of buying a tagine, could I do this in a pressure cooker? If so, how long should it cook?
Nyceee sharing........lk
Any food history buffs out there? I'm curious as to what would have been traditionally used in a dish like this prior to the discovery of the new world. Tomatoes and Potatoes are South American and wouldn't have existed in Moroccan cuisine prior to the late 1500's. That's a long time ago I know but I'm still curious about the history of the dish.
you are ace jamie
OMG!!! I want that tagine right now. My mouth is watering :'(
Could you use lamchops I don’t have shanks
Sooooo yummy 🤤
Genius
Wanna eat this now! For breakfast
In the oven???? Or on the hob???
Jamie you need to do another cooking show on tv travelling the world while cooking would be great!!!!!!
He throws in the tomatoes, apricots and potatoes etc into the tagine, then the lamb on top - but no mention of stock or liquid. There will be some moisture from these ingredients but 2.5 hours in the oven will dry the shit out of it. At least 1-2 cups in that tagine should keep it wet . Not like a soup, but just a little saucy.
Maybe not. Wouldn't the cone shape of the lid concentrate the moisture and ensure that all of it will trickle back down ?
judithmarianne on a really good tagine, id assume so, but mine has a habit of a little liquid seeping out from under the lid. a little extra liquid really doesnt hurt ;)
He puts in 1 kilo of tomatoes. Tomatoes are 90-95 percent water, so essentially, he has put in 900 grams or just under a litre of water in the dish.
Steve Adams we call it here in morocco : i will cook a tajine without water thats mean the top of tajine cooking. However jamie uses a lot of tomatoes you should try it then you'll see
Buona
Any alternatives to using a tagine?
Oh my golly gosh!! Yummmmmmmm
mmmmmmm u the best Jamie Oliver
My mouth is watering.....Lee x
