I don't agree with all of the choices, but I love how he explains his reasoning for everything (except the sauce), which allows you to customize if you disagree. Personally, bacon and sausage is a bit too much, and maple-glazed bacon is too sweet for me. So I'd go with a (thinner) sausage patty and maybe a hot sauce.
I think maple bacon is ok that sweetness can be customized to counteract the saltiness of the bacon or sausage. But I do want some spice, so I would probably make an aioli with the eggs given to make homemade mayo with lime juice and hot sauce, so u get that acidity, creaminess and spice all tgt.

you should have brushed the maple syrup before putting the brown sugar on top so it sticks to it (you brushed it away). 2nd thing, I was like I hope he doesn't break the yolk... just like all media videos, why? just bite it and let it bleed.
Personally, I break the yolk with a fork or something after I place it on the sandwich so that the yolk has time to spread and I get more bites with yolk in it.

Breakfast sausage patty not Italian, go for the chicken eggs with the real color since it will be the sauce, nothing on the bacon unless you want to use brown sugar, put a thin layer of homemade grape jelly on your bun if you want something sweet on there... it goes great with salty meats.

This is at least a 1000-1200. Bun is 500-600 with the butter/mayo alo, egg + cheese 250-300, bacon + maple syrup 300, sausage pattie 300 for a total of 1350😮
What's the point in caring so much about the mess of the bread if you're just going to squeeze the yolk out? Just make a soft scrambled egg patty using the same ring mold and pan.
You could also just make a folded egg sandwich. Just lightly beat your eggs, add butter to the pan and then pour them in and tilt the pan to get a flat layer. Place a slice of cheese in the center and then use a thin spatula to gently fold the 4 ends over the cheese. Flip for a few seconds to seal it shut.
