You can have a look on Google's Dialogflow to better understand how these assistants are designed and made to be the way they are. In other words, the Google Assistant is just a carefully crafted action-reaction network that can do only as much as Google lets it. Any change of personality or the way it does some things is a planed decision (or a bug). Worry not, we're still too stupid to make a conscious machine.
