Weeknight Chicken Casserole

Easy cooking for busy families
2 cups cooked chopped chicken
1 can cream of chicken soup
1 can cream of mushroom soup
1/2 cup mayonnaise
1 small can of sliced mushrooms (optional)
couple of dashes hotsauce (optional)
1/2 cup chopped celery
1/2 cup chopped onions
2 cups shredded cheddar cheese (put on top of casserole)
Cook the celery and onions in 1 cup chicken broth in microwave until soft then pour enough liquid out so the cup lists 1 cup
1/2 to 1 stick melted butter
1 sleeve crushed Ritz crackers
Mix everything except the butter and crackers together very well. Pour into a
7 x 11 OR 9 x 13 sprayed oven proof casserole dish. Put the shredded cheese on top of the mixed ingredients. Put melted butter in a bowl and pour the crushed crackers into the butter to coat. Put this on top of the shredded cheese. Bake 20-25 minutes or until it bubbles. Let cool about 10 minutes before eating. Enjoy!

This looks so creamy. I'm trying this tomorrow. As for the moldy cheese, I prevent that by opening the bag as soon as I get it home from the store and splitting it up and putting a bag with half of it for later into the freezer. The freezing doesn't disturb the taste or texture at all. Maybe one of these days you can make a video of Sam's favorites. It's very enjoyable when he has a fit over your food
HI Ivory, I put the rice on the plate first and the casserole on top of it. The casserole needed the other can of chicken to firm up properly, but it was good just the same. TFW God bless

Looks real good Linda. Sorry I didn't get on here yesterday when you came on. My roommate driving me nuts. I'm gonna be moving hopefully before next winter. He just don't know about it yet. I think the only thing I will have to get is the celery and maybe cheese. Can I use Miracle Whip or does it half to be mayonaise? Hope you and Sam are doing well. It's finally warming up around here.
