You’re fantastic in so many way and I’m a subscriber too. I’m a senior person, a fairly good cook and still do often pick up tips when watching your videos. It helps with my Cantonese too. I noticed in this video when you were making the dough for the wrappers, in the English subtitles, it said potato starch. After resting the dough, in the subtitles, it said cornstarch although potato starch is specified in the ingredients list. Please clarify. Thank you for all the wonderful recipes, keep them coming.

I have finally successful ( though the pastry are still too thick and the folds are not as beautiful as yours) after following your recipe step by step, though I managed to make only 12 pieces instead of 16. I had failed badly in the past following a Gweilo channel 's recipe. Their amount of ingrédients were all wrong and my dough fell apart like crumbles. I love your way of using hot boiling water, which really strengthens the dough and prevents it from cracking. I live in France and have no way to enjoy fresh Har Gow unless I drive a few hours to a Chinese restaurants or buy the frozen ones. Now that I learned from you I don't need them anymore. Would you like to do a video of roast duck? I crave for it for ages. Thank you so much and keep up the good work 😊

分量一樣,蒸熟的蝦餃皮全部破裂,皮是粉,沒有一點彈性。
Mickey Yuen 要將兩種粉拌勻,沖入大滾水將粉沖熟,記得用蓋覆蓋著,待三分鐘才加入餘下生粉搓勻,要搓三分鐘,粉糰才有靱性,蒸時便不易破裂,包好的𧎚餃,用濕布蓋著,便不會乾烈,(亦是破烈原因之一),下次再做,要注意這幾点😊
