    Worked for him between 194 and 1995, and it was the best school I ever attended. His wise words still thunder trhough my mind, and after working in La Tante Claire, the word opend itself up for me. What an incredible experience I had.

    When I was nineteen my parents took me to a French restaurant in San Pedro. I had never really had French food before so ordering was a problem, mom suggested sweet breads. Oh my goodness this was something like I had ever had before, so delicious and I’ve never seen it again. I’m going see if I can buy these and try to make something I’ve missed for 30 years.

    I ate these in Buenos Aires and Montevideo and never ate anything better..Incredible wine and I was in heaven..
    You cannot go wrong if a restaurant features this dish..They more than likely really know their stuff..

    This is one of my favorite sweetbreads recipe, very simple yet elegant! I've impressed my husband (with this recipe) who grew up with another recipe. Today I'll try to impress his best friend!! Thank you for this recipe, you are one great chef!!

    My mother blanched them first and then removed all the membrane and then simmered them in milk. When I hear Sweetbreads, that means Saturday mid day meal, same as chine bones and bacon ribs. From our traveling butcher. Years later he set up a butcher shop with his brother, sadly his brother passed away, too soon. His nephew now runs that butcher shop and I get all my meat from him and tomorrow I will enjoy a pot of oxtail soup from a tail purchased from that shop. During the past week I enjoyed a couple of pork cheeks and holy of holies, two wee snippets of sweetbreads. KEEP TRUE TO YOUR BUTCHER

    I love sweetbreads and brains however my doctor said to go very easy as not good for cholesterol or
    Pancreas.

      @@CooManTunes He means sweetbreads are close to 100% cholesterol, and are not good for you period. If I see them on a menu though I will always eat them.
