My husband is a custom welder and had a Great grandson come in with a cast iron pan with a broken off handle. It belonged to his Great Grandpa.we put in in his oven at 900 degrees and welded the handle back on. It looks very old and Rusty so I followed your directions to restore it and now it's seasoned, clean and looks new. I looked up the pan and it dated back to the 1800s. He's going to be so impressed and able to pass it on to his own family.
I just want to comment and say I immediately liked this video because you were kind enough to write out the directions in the description so I can skim before I watch the video. You’re a legend.
I have been wanting to get a cast iron skillet for a month or so as a single man in my 20s, learning to cook for himself. I went out to the trash compactor in my building to drop off my trash and found a whole slightly rusted set of these ranging from small to large just sitting on top of the dumpster. I figured, what the hell? Can't be much to cleansing them, and grabbed them all lol... Thank you so much for this informative video! Now I have an entire set of perfectly good skillets and I love to use them all!
From a guy in his sixties to the single man in his 20's. Should you wed, DO NOT allow yourself to be talked into "new" Skillets! Yours will serve your offspring and theirs. Well, sent her down the road, now much better off with a wife that understands cast Iron. Mind your top knot my son my son.!
I wish I could add pictures to this comment because my cast irons have never looked this good even when I first bought them!! I was definitely worried about the temperature being 500 while keeping the pans in for an hour, which I only did 30 minutes because it was getting really hot and smokey in my apartment 😆. But they just look so good after I let them sit in the oven for another hour after I turned the heat off! So thank you so much for this very simple and helpful guide 🌟🌟🌟🌟🌟 My cast irons are saved because of you!! ✨✨
Inherited one from my late mother, she got it from a family friend's grandmother. Estimated close to 150 yrs old. Thanks for the info, exactly what I need!
Thank you, you are a GOD send for restoring cast iron products. I did what you said on everything I own from my mother passing and it WORKED!!!! THANK YOU!
Thank you Chef Billy. I really like your pleasant face and directions on how to clean and season a new, rusty or just having cooked skillet. So thank you again.
No matter how busy you are, or how much you want to move on to something else, DO NOT STOP THIS VIDEO! At 4:16 there is the Most Amazingly Perfectly Gorgeous Ribeye steak you have ever seen! And this is one of the very best reasons to watch every second of this video, so that you can learn to maintain your cast iron and cook steaks like this!
My mom gave me her cast iron skillet when I was 18 and she kicked me out, lol. Still have it and while it’s been through some hard times with me in the early days it’s looking beautiful now.
Bought a farm and inherited a beautiful cast iron pan that needs rust removal and seasoning. Thank you for a complete A-Z instructional video on restoration and care 🍳 Subscribed!
Chef Billy, this was an incredibly helpful video! I bought what was 'billed' as a preseasoned cast iron skillet. I poured the scrambled eggs in and almost immediately realized it was not really a preseasoned skillet. It will be an effort to get the egg off, and then I need to do a really good job of seasoning it! THIS VIDEO WAS INCREDIBLY HELPFUL, THANK YOU!
Thank you so much! I always thought the seasoning process was complicated. I am new to using a cast iron skillet. No one ever taught me anything about them. You made this so easy to understand.❤
Oh, my gosh….this tutorial works perfect for my old cast iron skillets that have been shoved in the back of my cabinet. I decided to get them out and try to restore them. Thank you so much!
I bought my first skillet (I bought a used in a really good condition) but it needs to be seasoned. I'm glad I found your video it's exactly what I was looking for. Now I'm going to restore an old griddle too (13 years old) that the other day slept under the rain. My bad. Thank you. They are in the oven now. Yay!!!
GREAT video, but I have to agree with one other person’s comment, and feel it’s important to mention. Make sure, when cooking the skillet 1 hour in the oven, you have good ventilation, or do this on a nice day/evening when you can open windows and doors. Learned the hard way. 🤭😵💫
I just moved into a new place after having my things stuffed in boxes since the start of the pandemic. Unfortunately some moisture got into one of the boxes, and it happened to be the one with my cast iron pot in it! Rust all over! I'll be sure to get some brillo pads, so I can save it! Thanks for this :)
love the video, this is perfect timing, my kids started to do some digging looking for old stuff at a family farm in pa, they found this cast iron skillet was in the worst condition, the pits, everyone told me to throw away don't use, germs etc, and stuff people would get sick cooking food in it, going to clean and try anyway. hope it works out
We just found a few of my great great grandmothers in the same condition! I ended up stripping the pan, scrubbed with soap and water and a steel scrubber until I got to the bottom of all the seasoning. It was that bad! The stench of 30+ year old oil and all the dirt and grime. Then we reseasoned a few times. Now I’m going to take it camping and continue to season it before and after each use until it’s back to its original glory.
Late to the party. This is one of the more brief and easy videos on the topic I've watched (the maintenance part, at the very least), so thank you. Everyone has their own method, but a few things are crucial I've found...and most agree on these points. 1. keep it as simple as possible 2. light abrasion, no soap (salt and/or a fiber brush or ringmail and a little hot water) 3. dry thoroughly season with a little oil after while pan is still warm 4. stay away from acidic foods (cook those tomato sauces in a pot)
Just got one from my husband's aunt. Her husband is from Marfa and was found in the old house. On the bottom of the pan it's stamped No 7 and underneath that: 10 1/8
Thanks just did it to my new cast-iron. I seasoned it that what you said in the oven and it came out nice and shiny. I didn’t use it for steak and then what I did was clean what you said to do and then after that, I seasoned it when it was hot to put it awayand shiny thanks a lot❤😊
I love cooking with cast iron but have gotten frustrated with keeping it rust free for more than a few days. Just tried this method with the flaxseed oil and I can't believe how beautiful it looks!
Gotta put a few layers on the oven first. Like 3 good coats, don't let it soak. You use water to clean it, but you want the water to be on it for the least amount of time as possible. Hot water only especially when the pan is hot (cold can crack it and kill your pan). Best of luck!
@@imover9999 Any tips for getting carbon build-up off of the outside of cast iron? It’s not THAT bad on my skillet, and I definitely don’t want to wreck it.
Great tips! Thanks Billy. Could you also talk about pizza stone maintenance please? Cleaning and caring for your tools and equipment in the kitchen is key, makes a big difference. These tips are gold, thanks Billy. Stay healthy!
You don’t need to use 2 tbsp of oil on maintenance reseasoning (after cooking). Just a drop will do and it’s enough to spread over the entire pan. Love the salt tip for cleaning though!
holly crap, I was thinking "man that's kinda wasteful using salt to clean the pan". You can get 10kg bags for $3 of 99.98% Sodium chloride "de-icing salt" It's not like I'm going to use it for eating, the point is to clean the pan 😆
My mother got the most amazing cast iron skillet at a garage sale when I was really young, we had never seen one like it before. You could tell it was already pretty old and then we had it for another 20+ years. We used it religiously my whole life and all of us kids were fighting over who would inherit it. 2 years ago mom was diagnosed with brain cancer and she started passing things on and throwing things away clearing up the house some so my dad wouldn't have to do it all alone. The pan was then gone!! So we don't know if mom threw it away when her mind was acting up (because she would never have gotten rid of it in her right mind) or if dad did, but all us kids are so sad because it was an amazing pan.
I'm so sad to hear about your Mom - My Mom had bone cancer, it's so hard seeing your loved one go through something like this. Many blessings to you and your family - Asking God to hold you all in His arms to get you through this. Huge hugs
Tysm Chef Billy!! I subscribed & hit the ALL notifications😝. I look forward to your videos. You have a great voice, clear, articulate & just Precious. Hope you & your family are doing well & safe.
This also applies to carbon steel pans ^^ Very handy for my carbon steel wok, first time having to season something myself, as most cast iron comes pre-seasoned these days.
Your cleaning a newer cast iron pan. I see no "restoration" in this video. Try a 75 year old Wagner or Erie pan that has caked up crud on the outside and some rust. How do you get the crud off that?
@beaufleau great point. I’ve found the long soak in vinegar water + power drill and wire brush works, but you may have to repeat more than once. I used a torch and that helped too, so definitely add heat
I have several really old great cast irons like Wagner for example that was passed down to me and or I bought from flea markets. Best way to restore when they look like a rusted old pan is hot water, drop of Dawn dishwashing liquid blue and scrub with a copper scrubber or something with bristles that can get in there. Some time you may need a pinch of a coarse salt. Scrub til all the rust is gone, rinse then sit it on stove til you cook out the moisture. Let it cool then rub oil in and around the whole pan or throw a country ham in it if it’s deep enough then cook in oven or fry a pack of bacon in it on stove and bam it’s seasoned. Once you continue cooking in it you will continue to season more letting all that goodness soak right into the pan. 2:55
Born and raised in Erie PA home of the griswold!! And still can’t find one to own lol impossible to find! Guess I’ll live with my lodge for now. Sucks. lol
If you add a thick layer of salt over the entire bottom of the pan on top of the stove , the salt will prevent it from smoking. Then after heating it up about 15 mins or even 10, and allowing the salt to draw out all moisture you can wipe salt out and let it cool and then oil it.🤗
A good tip is baking powder if you a real old dirty rusty pan, I got my fathers 100 year old pan and when I used baking powder and a light scrub it looked like gravy :D
Totally resurrected a set of heirloom Lodge cast iron skillets that my mother gave me! However note to self: never use a large mouth bottle of oil near a hot pan- I touched the skillet and the knee-jerk reaction that I had sent that sucker sailing! I spent more time cleaning up the spill than I did seasoning my skillets. Note: No wildlife was endangered during this oil spill #Newbie
Chef Billy Parisi thx. Thankfully it was NOT near an open flame. It’s amazing how long they retain heat! But the warning is dually notes ;) thx again for posting this.
my dad always cleaned our cast iron pans, but he never properly cleans them. i would always avoid using them because the grease would stay on them-if you wipe your finger on them it leaves black grease. so now i’m here, figuring out how to clean them so i can make my skillet brownie i’ve been craving 😌
I needed this! My cast iron Dutch oven meal today had a noticeable metallic taste. Dumb me, I left some Super Bowl chili in it too long before cleaning. Well the cast iron in the oven now, oiled, 500 degrees. Thanks Billy
just got a smaller skillet (6 1/2") that I hope to use camping, it was pretty cheap but has a good heaft to it, only downside is that there is some evidence of pitting on the inside of the pan, should I take a sander to it to get it flat again or just season over the slightly uneven surface?
What do you think of the chainmail cleaners? I found that it's the best way to get the food off without ruining it or doing more abrasive scrubbers. Then I just lightly use the brush cleaner.
after cleaning i had to heat the pan over gas 5 or 6 times with a thin layer of table salt to suck out all the brown badness but it worked well, pan smelling clean again- everything was coming out black before
Thanks for this video!!! I just got 4 cast iron pans from my late great-great grandmother! We found them in her old house and my mother who now owns the property told me I could have them. Three just needed a good scrub with some soap and water and a re-seasoning, the other one we had to strip and start from scratch on because unfortunately it was thrown in a closet and remained there for about 15 years, after great-great grandmother moved/passed, as the house started to fall apart.
Question: I have a couple rusty skillets and while scrubbing at the rust it seems I rubbed off all of the seasoning in some spots while it’s a little thicker in the spots that didn’t have rust. Now do I need to scrub the whole pan until everything is even? Or will it even out with seasoning? Did I ruin my pans by scrubbing them down to the metal in some spots 🫣🫣🫣
Cleaning should be done by keeping the pan hot after cooking is done. Use hot water and the round brush. Return it to burner on medium to dry it. Wipe clean and use a few drops of oil with a paper towel, to finish it. Turn heat off, allow pan to cool completely and wipe excess oil before storing.
Great video. A couple of questions? I thought a Brillo pad was a no no to use on a cast iron, even when trying to restore it? Also, while maintaining it after just cooking on it, do you also oil up the outside of the pan as well, or just maintain the inside?
Those lil key chain squares I see on like Amazon you dont suggest that? Even tho it seemed to have a lil bit of rust that is OK to use? I have a 13" pan that I did the SOS on but to me it still looks a tad rusty and wanted to make sure!
Thanks for this. How do you handle splotchy inside rims of pans? I had a very rusty pan I cleaned and three coats in it is still splotchy. Thanks I didn't know you reseason after cooking. Cool.

Just scrub the f... out of it maybe with a wire brush to your satisfaction and season it. That easy. Well not that easy but you get the gist of it

@beaufleau great point. I’ve found the long soak in vinegar water + power drill and wire brush works, but you may have to repeat more than once. I used a torch and that helped too, so definitely add heat
You have to soak it first in a vinegar solution for several days, to get the rust off before doing any of this.
I have several really old great cast irons like Wagner for example that was passed down to me and or I bought from flea markets. I needed this! My cast iron Dutch oven meal today had a noticeable metallic taste. Dumb me, I left some Super Bowl chili in it too long before cleaning. Well the cast iron in the oven now, oiled, 500 degrees. Thanks Billy
Thank you so much, I had no idea how to clean the pot that I bought.
Thanks for watching!
Thank you for this video. I used your method on my cast iron pan. Voila 👌🏼 works perfectly.
Thank you for your helpful video! I am grateful to God! He is good! Blessings!
Thank you. I was about to throw away a good cast iron skillet until I watched this video.
Thank you! I just had my best skillet put through the dishwasher! 🤦
Thanks for the info on cast iron, and I live your sink.
My cast iron pans belonged to my grandmother. She got them from her grandmother. They were "those old things" back in 1945.
Would you clean and season a Lodge carbon steel pan the same way? My pan definitely is in need of reseasoning. Thx
just got a smaller skillet (6 1/2") that I hope to use camping, it was pretty cheap but has a good heaft to it, only downside is that there is some evidence of pitting on the inside of the pan, should I take a sander to it to get it flat again or just season over the slightly uneven surface?
What do you think of the chainmail cleaners? I found that it's the best way to get the food off without ruining it or doing more abrasive scrubbers. Then I just lightly use the brush cleaner.
after cleaning i had to heat the pan over gas 5 or 6 times with a thin layer of table salt to suck out all the brown badness but it worked well, pan smelling clean again- everything was coming out black before
I enjoy cooking with cast iron skillets but wonder what other cookware you recommend?
Thanks for this video!!! I just got 4 cast iron pans from my late great-great grandmother! We found them in her old house and my mother who now owns the property told me I could have them. Three just needed a good scrub with some soap and water and a re-seasoning, the other one we had to strip and start from scratch on because unfortunately it was thrown in a closet and remained there for about 15 years, after great-great grandmother moved/passed, as the house started to fall apart.
Hope this works for you!
Thank you for this😩I thought I was going to have to throw it away🥲😢
Cool.
The spots don’t really bother me much and don’t do anything during the cooking process, it’s just a cosmetic thing.
