    I have my great, great grandmothers that they were going to toss out!!! Fixed them up and now they are the only ones I use!!!!! 1800's~~~

      My family did this crap, also threw the family cook books out with the pots. My Aunts were just stood there years later when they finally realized what they did. Lesson learned, we saved my other grandmother's cast iron.

      So cool! I’ve got my grandmother’s pan that dates back to the 1930s or early 40s. When she passed on, my siblings and cousins took turns picking out her knickknacks and household items. I went last and nobody else wanted the pan! I guess each of us had a different item we associated with our memories of Grandma.

    I am 50 years old and been cooking my whole life. I've always wanted a cast iron skillet. One day my neighbor said she was going to throw hers away so I said I'll take them! And restored them up.😁👍

    I LOVE this lady. She handled being singled out and made an example out of with so much class that she ended up seeming innocent, even if she wasn't, and they ended up looking like crooked hypocrites.
    Then she bounced back as if nothing ever happened. I love this lady.

      She forgot to wipe it back off before putting it in oven. The extra oil is why it gets sticky or gunky as she said.

    This is the only t.v. cook I can stand. (besides Justin Wilson) . And she uses Crisco!!❤. I do my skillets over a camp fire and use Crisco.

    Never had any experience with cast iron skillets until just a few years ago when we somehow acquired several. They are the workhorses of the kitchen, and will serve you well if you take the most basic care of them.

    My great-grandmother's iron skillets are still going strong and they are well OVER 100 years old. This is the ultimate cookware!! Never had the need for anything else, used on stoves, in oven, open hearth, open camp fire, on the grill ( charcoal and propane) and on top of a very old cast iron wood burner. Never had a problem.

    Hands down best instructional video on how to take care of a cast iron fry pan. Short, simple and to the point. Others make it sound like astrophysics. I use coconut oil btw, don't want those polyunsaturated fats!

    I love this woman, she is so cool and knowledgeable. My grandmother explained the exact steps how to care for these items to me sixty years ago. Martha also took this to a higher learning level. Thank you sister, Can't help but adore you. keep it coming, you're appreciated.

    I use Flaxseed oil because that’s what my mom used. I inherited hers and love them so much I added another with short sides for easy use during breakfast cooking. Don’t waste your money on that cheap Teflon pan stuff which peels, doesn’t last long and is unhealthy. Cast iron is what real cooks use.

    I have all the cast iron handed down to me from great grandparents. It dates back to the 1880s 1890s never be any cast iron like this stuff again. When I first got mine they were all rusty from sitting for 20 years. I scrubbed them all clean with hot oil and steel wool. Got rid of all the rust and they all look brand new and cook great. I've had them for about 10 years now. Also have a large dutch oven that's about 75 years old.

      just note you can use a little soap to clean one. Just don't clean with anything rough. Since as strong as that polymerized coating is, it can be rubbed off by something abrasive. And yes as you use it, you are pretty much creating a polymer on the pan. Hence why a normal low strength soap like dawn (nothing super strong) is ok.

    Thanks Martha! Just discovered the wonders of cast iron and I'll never go back to Teflon coatings. Still have stainless stock pots but for stove pans I'm sold on cast. Got a nice dutch oven a while back and only cleaned it not realizing it had to be seasoned. Yuk, don't do that, never cook in old cast that needs seasoning! Which lead me to a search for knowledge which lead me to this video.

    I had a great set of cast iron cookware which my wife threw out without my knowledge because they got rust on them. Broke my heart. I have a few pans now which I guard.

    You can also season your cast iron pan on the grill. Cuts down on the smoke in your home.

      @@knight5188 I've heard conflicting information. She said 350° which I think is below the smoke point. 2 other guys (1 chef and 1 cast iron specialist) both said to set the oven to 500° which IS above the smoke point...

    I did it first Martha's way, it was terribly sticky, to to much oil. Then I started over with Cowboy Kents method, it was an amazing difference. I love using it now.

    No matter how expensive cookware gets there's nothing like cast iron.....I season mine alot when new ( like Martha ) and only soap wash once in it's lifetime!! Then all kinds of oils soak in over time and it gets better and better....(also like Martha!! )

      @@SuperSaltydog77 problem with lard is a low flash point. Can burn stuff down if you're not careful. Not great for arteries but can't beat the flavor or smell if not scorched.

    I did inherit my grandmothers, from my mother Im now 40 and she gave me her biscuit skillet. How many family meals this skillet has seen. But it does need seasoned again. I love you Martha you make things so simple for a country girl like me. Thank you much sweet lady.

    Sometimes after I use it I rinse it out, rub grapeseed oil on it, and then just put it back on the stovetop to dry it out.

    I worked in a kitchen supply store for a year, and we would often have people (often older people in their fifties or sixties, although other age groups weren't excluded) returning our "horrible" cast iron skillets because they knew all about them from their grandma, and nothing ever stuck in hers, but when I would ask them about how they were treating them, they basically said they would treat it like any other pan, hot soapy water after use, typical habits and whatnot. When I explained this to them they were astonished, and many of them took them back home to give it a shot, and they never brought them back after that. It got to the point that we would go out of our way to make sure the people buying our skillets would know how to treat them, although of course many people just don't care enough to listen. We even had a guy buy a Lodge steel skillet, and he returned it after he'd obviously left it sitting in the sink on top of a dish full of water.

      Hi! I would like to ask you something, maybe you can help me. I never had a cast iron skillet and just got one, a new lodge 10,25 inches, wonderful. I used it only once, to cook eggs in it, just to see what happens. They stuck to the pan. I have a ceramic stove, I used middle heat setting (it has a scale from 0 to 12, I used 8) and the eggs were unfortunately cold from the fridge (I only have cold-from-the-fridge eggs, was I supposed to let them reach room temp?). Anyway, my problem is another. I am unsure if my skillet now has a crack in it! After cooking the eggs, I let the pan cool completely and washed it the next day (yes, I am a monster) with warm water and a scraper from Lodge. After that I oiled my pan and put it on the stove again at "8" until smoking point. Nothing else. I observed a line, like a fine crack line, either in the seasoning or in the pan on one of the sides of the pan. Do you think I have already ruined it??? So fast? I never used max heat setting, but in truth it did reach smoking point kind of fast... :((( Is it broken?

    I have an old beautiful cast iron skillet that my Mom bought at a garage sale probably 80 years ago. The sides are caked with carbon but the insides are smooth as silk. I consider it an heirloom. She used to make mashed potato patties from left over mashed potatoes and get the greatest crust on them.
    She taught me to just used hot water and dish soap to clean and then heat the pan on high flame to dry. Still works great to this day.

    I'm looking through the Joy (1997 edition) and have had no luck in how to care for my cast iron. God Bless Martha Stewart. The classic mom.

    You can clean a cast iron pan by using salt and hot water. The salt is used as an abrasive. I used kosher salt and a paper towel. The plus is that it's edible, and salt is also a disinfectant (nothing can live in salt, which is why you "pour salt on the wound" to kill germs).

      salt also causes rusting which is why we wash it off our cars.

      Linda Strang Salt is corrosive if it sits on your car for a while. So obviously if you wash the salt out of the pan right away you're not going to have any issues.

      twinkle twinkle koshering salt has nothing to do with being Jewish. Ther terms comes from it's use of making meat kosher by removing surface blood by desiccation.

      Every chef in the south uses this culinary gadget. I must say, both the cast iron skillet and the carbon steel wok are both great culinary gadgets and both require special cleaning without it rusting.

      You do what Martha said to cleaned and seasoned every time you cook. I just got one I didn't know that it rust I want it to get rid of it when I saw it . Then I look at You Tube and I found you need to season it and cure it. You need to do this step every time? How you keep it clean and looking good? Thank you for reply have a great day!

    My grandmother was Mildred O. Knopf, who wrote 6 cookbooks. I was lucky enough to inherit her full set of cast iron skillets. Oh the wonderful meals that were prepared in those pans!

    Martha, I have heard of people who take new cast iron skillets and give them a good sanding with sand paper. They say that part of the seasoning or rather non-stick nature of cast iron comes from years of use and wearing away of all the little imperfections produced during casting. Rather than wait for all those years to accumulate, they speed it up by sanding the inside of the pan smooth, then season it just as you have shown. I have also heard of expensive cast iron sellers who have done this for you in advance.

    Of course, you can use soap on your cast iron. I don't always, but occasionally I use dishwashing detergent. It is mild and will not harm the seasoning, at all.

      great to hear this Laura. I tried to fry cat fish few weeks ago and it was the worst experience. the fish was stuck to the pan, eventhough I had enough oil, I had to scrape them off. In doing so, whole thing fell apart so we ate many many tiny pieces of fish that night.
      not sure what happened and why it was stuck like that
      I am now afraid to fry anything
      can you give me pointers or at least make me feel better?

    Martha doesn't mention it here but if you have an electric stove it's best not to use a setting higher than medium on your burner when you use a cast iron pan. Cast iron is mostly carbon and steel and these two elements are very malleable. The cast iron that the pots are made of have been hardened in the process of forging. This is done by gradually exposing the pan to greater and greater heats. Using the Rockford scale the pans are usually between 55 and 68. When they are being hardened they are taken in and out of the oven at given times and the smith will drench them either in water or oil-usually oil. This keeps the steel hard and solidifies the bond between the carbon and steel. If you turn your electric stove on high and then put your cool pan on it, you are essentially placing the pan in a forge oven, and all of the hardening is undone. It super-heats the pan very fast and the pan will then warp and be ruined. So when cooking take your time and let the pan heat at a medium or under setting on an electric stove.

    For new Lodges use an orbital sander with 80 -> 200 grit to knock down the peaks in the metal's finish before seasoning. It'll make a world of difference.

    Thanks Martha, Just one thing , you should use a paper towel and salt to clean the cast iron after each use. The salt absorbs the fat and can be used to scour out any bits. No water used, no need to re season. Thank you.

    Shouldn't use paper towel you will end up with fine amounts locked into the seasoning. Lint free cloths work best. Enjoy !

    I love your videos so much and watch your show on PBS. I have a skillet which belonged to my grandmother, and she used it in her kitchen to cook with. It just occurred to me that I need something like this to cook in when our electricity goes out where I live. I ordered a new American made cast iron kettle and lid and will be using it along with my skillet to cook in more when we have the power outages, and when camping out. I love your cooking skills so much and love watching your baking show so much.

    Grapeseed oil is the bomb...You wanna season your CI well, use Grapeseed oil. I'm telling you, it will give you fantastic results.
