No I think its two steps...they boil or braise it first in a broth, then they deep fry it. Don't think you can deep fry a raw pig foot ...it won't cook through...so it looks like they cook it first then deep fry...

Dirty? black water is Chinese herbal set soup. Leg pig was boiled more than 2 hour and dried 2 hour before carried to the market.
