His chicken is so good, it's all he sells...and he's got dozens lined up with baskets in hand before he's done with the first batch.
I thought it fascinating he just cooks it, drains it and then puts it all on a tray and the customers pick what they want.

Doesn't look that way at all because I see the same people picking the chicken over and over, seems like they have runners that take an order and pick the chicken to meet it.
Thai street food kicks ass, so good and fresh... if the locals are lined up its gotta be good
and everyone is so patient.......no one pushes in, no one gets aggressive.......no one is greedy.........
But now I'm starving!!

The chief's here in the United States and others countries don't wear gloves while handling the public food. It is really a big turn off for me. Why our government not doing something about this. God help us all with people handling our food at all these restaurants.

How does it work in Thailand, do u rent a space? Or can you just turn up and cook?
As in UK u have to have a street permit plus l9qds of other docs to sell food..
In Thailand it just seems you can setup on a space it becomes your regular spot.
