It's the neural pathways in your brain. You spent years building them, it's gonna take years to reconstruct them. Even after you quit using those pathways are still there. What they call "triggers" are situations that make those neural pathways fire up and you're back on the path of drug seeking behavior. It's why they call it "behavioral therapy", you have to change the way your body behaves and at the core of it is your brain.

Dr. Peterson had a good way of putting it in a video I saw yesterday. "You have circuits you build in your brain, when you build your drug circuits you also have other circuits associated with it. On the way home from work and you buy some beer on the way home? So even if you stop buying it you'll have that "stop at the store" circuit activate when you leave work.
What you can do is create new circuits to override the old ones. If you have a favorite store to buy your alcohol, take a different route home. You can create new patterns of behavior and new circuits to override the old circuits of addiction, until finally they shut down."
