Fresh Orange Fluid Gel | Chef Studio Modernist

  • Here's a quick and simple recipe for making this beautiful fresh orange fluid gel for plating. Serve this with savoury dishes to give a sweet balance to things like duck or use on or in desserts to elevate or compliment flavours. The texture of the gel is super smooth and the flavour is light and fresh.
    Fresh Orange Fluid Gel Receipe:
    500 ml fresh orange juice divided
    25 g sugar
    Juice of 1 lemon (30-50 ml)
    4 g agar agar
    Method:
    Juice fresh oranges until you have 500 ml of total juice. Pour 250 ml of the juice into a pot and reserve the remaining 250 ml for later. To the pot add in 25 grams of sugar and 4 grams of agar. Bring to a boil over medium heat for 1-2 minutes and remove from the heat. Add the juice of 1 lemon to the uncooked 250 ml of orange juice and then pour this into the cooked orange juice mixture whisking to incorporate.
    Transfer to a shallow pan to cool in the fridge for 30 minutes. Once firm, transfer to a blender and blitz until smooth. Store in a container in the fridge for up to 5 days or transfer to a squeeze bottle for plating.

    Question wen the gel cools down does it become solid again and do u have reblend for later use??

      Nope! It will stay gel like. I think if you left it for like more than four or five days it might start to firm up again but I wouldn’t recommend keeping it any longer than that anyway! Hope this helps ☺️

      wouldnt put it in the cupboard, fridge around 3 days max of 7 days and i'd say freezer roughly 6 months or more, you'd have to have out by freezing some

    You've done this two times so does that mean you can basically do it with any fruit or the fruit has to have specific characteristics to be turned into a plating gel?

      Low pH weakens the strength of agar agar, so you need to add more of it to make lemon or orange fluid gel

    If you do this one day in advance of your actual cooking. Would you keep the jelly or the blitzed gel in the fridge?

      Thanks for your comment! Yep just keep it in the fridge in a squeeze bottle. It stays a gel texture.

      Just don’t freeze it because agar agar doesn’t like freezing.

      I suggest you to pass it through a sieve
      Also avoid putting to much air in your gel when mixing it :)

    I find that boiling the fruit juice always reduces the freshness of the flavour. Is heating the agar in 50ml of hotwater then stirring it in not better? that 250ml of orange juice is kinda destroyed anyways

      It probably will dilute the juices if adding hot water to dissolve the agar agar, maybe thats why the chef separate half of the juice to add after dissolving the agar agar, still keeps some of the fresh flavour from the fruit

    one way to get rid of the bubbles is to put the blended gel in a vacuum chamber

      @@santiagojimenez6226 unfortunately that is the only option. Usually, for any other fluids, the solution would be to just to wait. But gels solidify/coagulate (?) while you wait, which doesn't give enough time for the air to escape.

    when I tried, the jel totally melts down in the mixer, after the blitz i stored it into a airtight container and put them into my refrigerator, after some time tht jel again became a jello

    If he approved of monetization and views off his death and the trauma that he went through, I see no issue. If he said get the bag, use my death as content while he was in his last stage at least there was consent if he gave the okay. But If he didn’t want his death to produce so much content and pity views, and he gave you no clear as day consent while he was alive, it’s kinda F’ed up man. Or if it messes with his family, that’s when you know, probably not a good idea to use his death as content. I just hope he had consent is all
