Hi, first of all love the recipe, I tried the recipe the plane or original nankathi recipe can out with perfect but the flavoured once came dry and a bit hard. What do I do to avoid it for the Rasmalai flavour I added all the required ingredients then it became too wet so I added a bit of wheat flour in it so that it was manageable. please can you guide me as to how do I get same kind of softness and texture with flavoured and nankathi. I am able to get all the flavours

No coffee concoction means around coffee powder dissolved in hot water. I used 2 tbsp coffee powder dissolved it in little water and then used around 1.5 tbsp of coffee concotion to make the recipe
Akka a doubt , is there any tip to reduce the raw taste of besan ? I had tried the nankhatai recipe , loved it but I could feel the raw taste of besan.
That is strange.. may be you can dry roast them a bit beforehand.. however in this case we are using strong flavours so I think it should mask the raw flavour..

If we add extra liquid in, then it will be more moisture in, this cookies will be soggy how they will come crispy?
You are compensating the liquid with nuts na which are hygroscopic in nature so the cookies do turn out crispy
