Sushama - my nanakhatai measurements are the same.But I cream ghee & powdered sugar first till light & fluffy..then I add the dry ingredients. Am I doing it right? My nankhatai tastes good..
Hi Nalini.. The process that you are following is known as "Creaming". When you cream the fat and sugar what you are doing is basically creating air pockets for the eggs and flour to sit. That is one way of making cookies. In that method there are chances that you accidentally incorporate too much air which causes the cookies to spread and lose its shape at times. The method that I have shared is known as "Reverse Creaming". In this method you basically coat the gluten in the flour with fat that way your cookie wont be chewy and stretchy. You can follow any method

I tried the recipe same measurements but I needed to add a little extra butter/ghee to make the soft dough where did I go wrong? And yes I added the extra ghee after kneading for 15 minutes with no result
In your nankhati recipe no baking soda or baking powder is used just combine ingredients and set the balls and refrigerator for 20 minutes and bake at 190°c for 10 15 minutes right

Hi Rupa.. this is a fairly easy recipe and the quantity is also very less. There is no need to use stand mixer for this.
