A couple of weeks ago we invited a Italian chef to try some Chinese hand pulled noodles for the first time and he loved it. In fact he loved it so much that he invited us over to try some hand made Italian pasta. Let's see what he thinks!

@@CantoMando Too true! Even with individual hot pot, it’s the best to have some people. One individual doing hot pot….It’s a very lonely experience. And yes, if you somehow can get everyone together, no individual hot pot, go for the true experience. One large “pot” in the middle, with a divider in the middle, non-spicy soup base one side, spicy the other. Hot pot brings out the meaning of getting together and sharing and experiencing the joy of eating together.

I love how expressive the chinese chef shows so much more emotion than any words could convey.
I love that the chef has a garden. Nothing beats the taste of fresh herbs and vegetables. Myself I grow a lot of rare veggies that are not available at supermarkets. Many Italian and Chinese families have gardens.

Looks awesome :) Thanks to hand injuries I cannot handle the long noodles very well, so almost all of my homemade pasta dishes are rotini or penne. But, it tastes good :D
试过很多种融合做法,做担担面的时候用过意面,然后跟vincenzo学做carbonara的时候用的宽面(油泼面和烩面常用那种宽面)这两种是我觉得融合的最好的😋

As an additional information. Semolina aka durum flour (bread flour, freekeh, couscous) is of the hard variety of wheat which is the prevalent type used around the world. It possesses the highest protein at +15% (gluten) whereas "00" aka cake flour (3-5%) in Europe (ideal for fresh pasta or viennoiseries such as croissant and such) or all purpose (6-9%) in North America.
Here is some more details.... Italians consume more soft wheat flour per capita (in the world) as they favour to make their pasta daily at home. USA consume more hard wheat flour as a nation since their dietary requirements are met predominantly with transformed/manufactured goods.
The use of Hard variety is necessary for any frozen, dry application as they weather these "elements" far better. Soft variety would completely break down under these conditions.
The benefits of using one variety over the next is firstly the intended use but secondly a main fact which is more often overlooked is that soft wheat doesn't over exasteurbate those that are gluten intolerant. Italy has been dubbed for the last decade or so as the most gluten (intolerance) friendly nation simply due to the choices that all citizens favour the use of freshly made foods vs manufactured.
Their wheat 🌾 production is 60% soft and 40% hard whereas the USA is 99.1% hard and 0.9% soft. Those that suffer from Celiac (gluten intolerance) in USA is ~4% in Italy it is much less at ~0.6%. while these numbers are medically proven they remain estimates in the USA as only 8% of it's population has undergone official medical testing; as this is a expensive test and analysis to perform there ($3k-5k)😮 compared to a mere 150€. So as 2024, one could estimate that gluten intolerance affects nearly or exactly 50% of US citizens based on current facts.😂
The other thing that is never spoken about is the portion sizes, China and Italy don't serve colossal portions of pasta/noodles in their respective dishes whereas in the USA they pile it high.
