Betty's Emerald Isle Dessert for St. Patrick's Day

  • Betty demonstrates how to make a St. Patrick's Day Dessert. This is a beautiful emerald green dessert dressed up for St. Patrick's Day.
    Emerald Isle Dessert
    2 (3-ounce) packages vanilla pudding mix
    4 cups milk for making vanilla pudding
    2 (3-ounce) packages lime JELL-O mix
    1 ½ cups additional milk
    40 soda crackers, crushed
    ½ cup sugar
    ¼ cup melted butter
    whipped topping (Cool Whip), for garnish
    green maraschino cherries, for garnish
    Prepare vanilla pudding according to package directions, adding 4 cups of milk to pudding mix and bringing it to a boil over medium heat in medium-sized pot, stirring constantly. Sprinkle dry lime JELL-O mix over hot vanilla pudding. Stir until mixed. Add 1 ½ cups milk. Stir, cover with plastic wrap, and set aside to cool. Combine cracker crumbs, sugar, and melted butter in a 13-inch by 9-inch by 2-inch Pyrex dish. Press crumb mixture evenly in bottom of dish. Bake crumb crust at 350 degrees (F) until golden, about 8 minutes. Remove crust from oven and cool. Pour pudding mixture into cooled crust. Refrigerate until pudding is set. Cut into squares. To serve, place a pudding square on a serving plate, top with whipped topping and a single green maraschino cherry. This is a dessert that will brighten your St. Patrick's Day table!
