    Katherine Reid, PhD, is the founder of Unblind My Mind, Inc., a non-profit 501(c)(3) organization dedicated to improving the health of individuals and families through informed food choices. She recently released her book Fat, Stressed, and Sick: MSG, Processed Foods, and America's Health Crisis, which raises awareness of glutamate in our foods and its impact on health.
    Since earning a PhD in biochemistry, Katherine (Katie) has held scientific leadership positions in numerous Silicon Valley biotechnology companies. Her research has focused primarily on protein chemistry in the development of cancer pharmaceuticals and diagnostics. Her career took a turn when her youngest was diagnosed with autism and her scientific background led her to research the association of inflammation with our food supply. Her background in protein chemistry would find her ideally trained for discovering the massive increased production of glutamate in our food supply through common commercial food manufacturing processes. Today, Katie works closely with the public to devise food solutions to reduce chronic inflammatory conditions plaguing our population. She also collaborates and influences various communities (medical, foodies, education, special needs programs, farming, biotechnology), and guides data-driven food solutions for a healthier population.

    My 90-year-old mother was told 60 years ago when she was diagnosed with rheumatoid arthritis to avoid MSG and a long list of many other ingredients listed in foods like nitrates and nitrates and food colorings etc .
    I have followed her teachings .. I have had a list of the names for MSG for years .. unfortunately what my family consumes outside of my home has created food addiction.. I eat at home and with my best friends .. Me, Myself and I .. 😊

    AJ, one of the best shows ever! My youngest son has Autism and ADHD and I'm definitely going to pay more attention to the specific foods he eats. Thank you for this important information!     What a great interview. I'm getting this book. I can remember when I was in my 20's, eating processed food and tasting it in my mouth hours later. That doesn't happen with whole-natural food. I've never heard anyone talk about this phenomenon, and perhaps if processed food is all you eat, you don't notice, but I think it's chemicals engineered to bind with receptors on your tongue and keep you thinking about and craving the food.

    Thank you so much for this interview. I tended to snack on nutritional yeast some evenings. Just shoving it in with a spoon. But I was starting to suspect that the yeast was really affecting my sleep. It keeps me awake with heart palpitations and feeling like I might have to call 911.

    Absolutely fascinating talk about this very fresh topic! Yet another thing big food embeds into our food system to get everyone addicted. Likely there are dozens more that we'll spend researching one at a time, making videos and writing books about, all the while they are making money hand over fist. The easy route is to go WFPB, and cut out a lot of that stuff! Great episode!

    Around 1 hr 10 min - the "auto" brewery question. I just read a few days ago about this. It's rare. Some guy was pulled over by the cops, not for drunk driving. They did an etoh test and it showed etoh in the blood. He was not drinking before...

    "The key findings have been that (a) the ingestion of MSG in the diet does not produce appreciable increases in glutamate concentrations in blood, except when given experimentally in amounts vastly in excess of normal intake levels; and (b) the blood-brain barrier effectively restricts the passage of glutamate from the blood into the brain, such that brain glutamate levels only rise when blood glutamate concentrations are raised experimentally via non-physiologic means."

      Yep, and the drama story that it was spawned from was that a 27 yo Asian guy had an episode in a Chinese restaurant in 1967....nobody asked why an almost 3 decade aged Chinese guy had never had a Chinese meal before???!!!!! His family has been very cagey about it since and it seems like it was pretty much a prank. Also I have trawled Google Scholar and looked at many studies on MSG and it doesn't have any more reaction on people than any other food additive. Epidemiologically, how come after 120 years after MSG's existence, why haven't thousands of Asians come fwd with horrific results???

    "The human body does not discriminate between naturally occurring glutamate in foods and added glutamate. Added MSG is much lower than daily dietary glutamate intake from natural sources. Thus, it is hard to attribute causal role in major central and endocrine pathologies only to MSG used as a flavor enhancer."

    I use soy milk only soy beans and water for my coffee. I’m so upset about nooch I eat it everyday I don’t know what to do 😢

    Is Glutamate the same as L-glutamine ???
    I just listened to a naturopath recommend L-Glutamine while going through stressful events like Cancer treatments and more. Confused! Thank you!! Oops! You just answered question- Thank you! 💜🙏

    One wonderful interview and theme chef AJ!!!
    In Switzerland, I know a group working with children and adults who suffer those sensitivities that touch, especially people different on the spectrum with autism, and remove all what she said, but they are not yet embracing the plant-based diet, however, they have impressive results!

    About 12 years ago, after many many years looking for the answer to migraines, I came across this amazing book which changed my life. (The Elimination Diet by the Royal Prince Alfred Hospital Allergy Unit in Sydney, Australia.
    I took pretty much all glutamates out of my diet.
    I had no withdrawals - only relief.
    There's many many everyday foods that are high in glutamate - spinach, tomatoes, broccoli, olives,
    all sauces, natural flavours and the list goes on.
    I changed to a very "clean" diet and, to this day, I eat very plain food. . .
    It sounds a bit dreary but waaaaaaay better than migraines.
    Also, Excitotoxins by Russel Blaylock is fabulous.
