    I watched at least 30 videos how scoring. I tried all techniques and knifes, nothing worked, until i read a comment in one of the videos saying DOUGH MUST BE COLD FROM FRIDGE. I tred antd worked as in all videos. All advices are 100% useless without know that...

      I am going to have to try that. For the life of me I can’t get an ear. Even bought the lame. I tried every kind of knife, razor and scissors. I have a loaf in the fridge. I will try scoring on that one. Thanks for the heads up!

      @@shericreates leave it all night on fridge and next day you can score it with a spoon 😂. Enjoy it!

      @@shericreates I got some beautiful ears this week on same day, no cold proof sourdough breads. Cut a little deeper. If I don't cut deep enough, they are flat.

      @@caninecrusader657 Yes I think you are right! Someone told me to only score 1/4” and no more. Deeper definitely worked better! I’m starting to amaze myself!

    top tip - put it into the freeze for 5 min.

    I have a mill, but I’m out of wheat berries. Which ones do you recommend and where can I purchase them from?

      Oh gosh it totally is personal preference! Hard white wheat is the most similar to commercial flour so that’s a great one to start with! I get mine from central milling or Janie’s mill!

    Hi, I tried this scoring today, but I don't understand why it's cracked in the middle of the scoring part😢 half cracked half fine. I want the pretty wheat scoring shape like yours 😊

      There’s a fair amount of nuance to this but most often under proofed dough will burst the score!

      Cuando ya has fermentado en frío, antes de decorar con la hoja o el cuchillo debes meter al congelador unos 30 a 45 minutos, no dejar que el pan se congele. Los cortes son con la superficie de la masa fría y un poco sólida para que resista. Luego el choque de calor te dará un pan hermoso. Hazlo y me cuentas!!!

      ​@@laexcel yes i did cold fermentation 18-24h, i took from fridge and stright scoring with leaves shape and put in oven directly, but the result of my leaves somebof them cracking.
      So i need to put in the freezer before scoring it?

    Where is the secret? I read caption, your channel and the description. I took it from another viewer it has to be cold. I’m going to try that.
