I used apple wood chips. I recommend fruit woods with fish because of their lighter smoke flavor. This fish cooked between medium and medium-high for 30 minutes. Cheers!

They're called roasting shields and Weber discontinued them in the U.S. You can use a double layer of tin foil with some slits cut into it. This video will show you how: ruclips.net/video/Zb-hhxiRWFo/видео.html

At what temperature do you grill the fish at? For how long do you grill the fish? What kind of chip wood do you recommend?

I've been cooking fillets on the Q directly on the grates recently. If the grates are oiled it the skin shouldn't stick.

Same here. I usually grill using charcoal but for the fall and winter where is gets dark early I am thinking of giving the gas Weber Q 1200 a try.
