my late Mom did cakes like this, and did tons of wedding cakes. She always used plain butter cream frosting, made with Crisco, to keep it white, butter always seems to go more yellow. You can make it simple with a smaller tiered Wedding cake and also do a sheet cake to feed more people

This is by far the most informative video I have seen so far, and I have watched many. I am determined to make my own wedding cake. My wedding is at the end of March. I really had my heart set on Fondant but after practicing with it, I dislike the taste. Will the soft frosting be strong enough for like a model truck for a topper. My soon to be husband and I have been restoring and old 49 truck and our bride and groom will sit on the tailgate..So it will be a little heavy. Any suggestions?
Michelle we used to own a wedding cake bakery and what we used to do, when there was a heavy topper was to take a cardboard round, and place it on the very top and then ice right on top of that cardboard round. Now two things,1) make sure that you use dowels to support the top cardboard because the truck is heavier...with that, it will not sink and 2) you are going to loose the icing on top because of the cardboard, so you may want to place a little buttercream on the side, so when your caterer goes to cut the cake, he can just top that top of the cake with some frosting. Simple. Hope this helps!
Michelle Boothe Oh yes...we used to do this whenever customers would bring in, and you would not believe the stuff that people brought in, heavy toppers. Crystal figures, metal formations, whatever. So we just placed the 6 inch round on top, and then frosted on top of the 6 inch round (with a little buttercream as glue underneath of course). Then there was a level surface for the topper and there was no fear that it would sink. Congratulations!!!
Felix Papadakis Oh and one more thing....prepare in advance and make the cakes like a week out and freeze them. FIrst of all, you must chill cakes in order to decorate, second, you need the planning in advance cause you are the bride, third, they will cut and stack better when the butter has solidified, and finally fourth, in order to add back any moistness which you may have lost, just make a simple syrup and brush each layer before filling. That adds great moisture back into the layers which is what you want. If you have any questions, feel free to ask any time.
Rather than use card board I would simply make a hard candy platform for each layer so that way I do not have to worry about soggy cardboard and everything is edible. I also make candy pillars for support. Then I would sugar weld them together.
Can you use Italian Buttercream as a base for edible images or will the image dissolve as the cake gets to room temp (in an air conditioned conference room)

It looked wonderful. What I don't understand is how to cut the cake at the wedding and get to the lower pieces without the icing on top of each piece being ruined from the above tiers sitting on it.
I eventually found another video showing it. I'm still confused by it though. It seems like having something sitting on top of the icing would ruin it when you take it off.
All the cakes sit on cardboard disks to keep them from sinking into the next tier. So if you cut down to the bottom of each layer, you only hit cardboard.

You're going to be cutting it all up at once, nobody is going to be able to see the icing at that point..
