Chef Alan Tetreault of Global Sugar Art demonstrates how to make your own three tiered wedding cake. In this Part 2 of 2, Alan teaches you how to accent your finished borders and complete the cake with gumpaste flowers. He also shows the same cake decorated with different flowers to show how a simple flower change will alter the look and style of the cake.

Indeed you are the best teacher
You could make the lace and floral borders a few days in advance but it is very important to keep them in an airtight container or bag until ready to apply to the cake.. The cake layers can be baked weeks ahead and frozen. Thaw the cake, ice and cover with fondant the day before the wedding. Your buttercream icing can also be make 1-2 two days ahead.
Always beautiful, and you always make it look so deceptively easy. But your wonderful teaching goes a long way to make it as easy as possible - thank you!
Dear, Dear Chef Tetreault, you have made such a difference in my days with this video. I spent the past two years fighting cancer, am now in remission, but it was quite a job to get all of those negative and fearful thoughts out of my head....until I decided to bring some "pretty" back into my life. This video has done that for me. Thank you from the bottom of my heart. Am going to give it a go as soon as I can order the supplies. You are such a doll and so very talented. I do realize my first effort won't be as lovely as the cake in this video, but what fun it will be to try!

I love watching this video, my auntie asked me to make her wedding cake and I did the cake your making though I used red velvet cake instead and changed the gumpaste roses🌹 to pink gumpaste blossoms🌸 but kept the rest of the cake the same with the rose molds and the colour of the fondant. Don't worry I'm 20 years old so she wasn't worried. Thank you for sharing this cake tutorial and my auntie was very happy and thank you again. 🍰

The easiest way to achieve a nice shine on any fondant it to steam it. Use a basic hand held clothes steamer ( a travel steamer works great ) and lightly steam the fondant. It will bring out a beautiful shine.

Yes, you can use lemon extract in place of the alcohol. Be sure not to use lemon juice as it does not contain the lemon oil that is needed to dissolve the dust.

I am self taught but was nervous about the fondant. I have a wedding cake to do in 2 wks. It is an unusual cake as the bride and groom wants a wedding cake to look like wood grain. How long does a fondant covered cake last?
For instance; keeping the top layer for the first anniversary. Would it keep that long? Or would it be only for looks.

Wow, is right. So gorgeous. You are also an incredible instructor. When you place the dowels in the layers of the cake do they fit together or they give support through the cardboard? I am curious how much one of the three layer cakes would approximately sell for. These cakes take a lot of time and a lot of work. I would like to try making one for a family member getting married. By the time your done getting all the ingredients and molds and tools it could add up to quite a bit of money especially if you do it Pro Bono. I love watching these videos. Thanks to you and your company!

thanks for the wonderful lesson. Me being a beginner with fondant and stacking cakes it really helped. My only question is how do i box and transport the cake.
Large cakes like this can be hard to box because there are not boxes large enough and strong enough. I always set the cake on a piece of foam padding in the back of our delivery van. If you drive slowly and be especially careful around corners the cake will travel well.
