Alright, so now we want to fondant our cake.
We've got a beautiful, chilled cake that's been perfectly crumb coated. It's ready to go. I have some fondant paste here. And what fondant paste basically is is a gelatin and powdered sugar mixture, and it should feel like Play-Doh. So, once you get it out of your bucket, you want to knead it. Press down with the heel of your hand forward, then take your fingers and fold it back over. If you feel any crumbly bits, you want to cut them out right away. You don't want to incorporate them into your fondant, or you're going to have some little pebbles in there. They don't get softer.
So it should get to the consistency where, when you rub it like this, you get a beautiful, smooth finish. You shouldn't see any little folds in there. Now, how much fondant do you need for a cake? That's a great question. What I have here is one of my many tape measures. And what I'm going to do is lightly drape it over the cake. Alright. So, this goes to the three-seventh mark.
The way to measure your fondant is you want to have a disc that's about an inch tall that will flip over three times within that amount of area. So I've got my measure down here to three-seven. I'm going to mark it with my fondant paddle, you guys can see it there. And I don't know if I have one, two, three, it's pretty much perfect. It's a little bit thick, so I'm going to cut a little off. I don't want to have so much that I've got a giant overhang over my cake. If I do that, it's going to really tug down. This is not light stuff, and my corners are fairly sharp. So if I have too much fondant and too much overhang, it's going to really want to rip around the top, which can be very frustrating.
You'll notice, too, that my cake is on top of a little riser here. And that's so that, after it's fondanted, I can go in and cut straight around. I don't have to go in and cut around the edge there, so I'm going to get a nice, sharp edge to my bottom. Move that off to the side.
I have some powdered sugar here and a fine-mesh strainer. I have two fondant paddles. I like to have two so I can have one hand on top while the other one smooths the side. And I'm going to put a thin, light layer of powdered sugar over the entire area which I'm going to roll it out onto. So I'm not just doing a pile in the center and pushing it out. I'm doing the giant, giant circles. So that's about how big it's going to be. Less is more with the powdered sugar. You don't want to overdo it because the corn starch that is in powdered sugar will dry it out really quickly.
The pin that I'm using is a French rolling pin. What I really love about this is that it's beveled on the side so that I can give more pressure on the left side or the right side so that I get a really perfect circle. Also, my right arm is much stronger than my left, so this helps me to even that out.
So I'm going to start by just rolling between here and here. You'll notice I'm not going over the edge. I pick up a little more of the powdered sugar. If you're doing a lot of these, it's a good idea not to wear blue jeans. This will pick up any kind of lint. The powdered sugar helps to create a static electricity, so any little fuzzies will attach to this. Okay, here we go.
Now is not the time to answer the phone. If you walk away from this, it's going to be so dry that when you try to put it on your cake, it's going to crack around the edges, and you're going to get what looks like elephant skin. I'm taking this down to about an eighth of an inch. If you can see the pattern of the table beneath it, it's too thin.
Alright. So, I will bring over my cake which has just come out of the refrigerator. I will put the bore, the rolling pin straight over the top and roll this back up. And as I roll it onto itself, I'm dusting off any excess powdered sugar. That will keep it from sticking to the butter cream. There we go. This is the easiest way to pick it up. Move this directly in front of you. And I'm going to line up the bottom lip with the bottom of the cake and then slowly unroll it over the top. And if it's a little bit sh

I'm in the middle of covering a 2 tiered cake - the bottom cake turned out ok but I've had so much trouble with the top tier and have gone through 2 packets of fondant I was literally dreading doing the top but after watching this I've got my confidence back again :-)

Perfect tutorial. I learned a couple of new things that will certainly help as I have three wedding cakes this year and some of them rather large. I can deal with the whole hair issue as I've been watching 'paid' tutorials with women who have too long nails, jewellery, and hair issues. I remind myself that it's not about the teacher, but the process and they are tutorials not demonstrations using sale cakes. Thank you very much and keep up the great work.

great tutorial Michelle! the tip about the fondant drying out under powdered sugar set off a light bulb over my head! i'm no baker, but i like to bake at home and try things i see on TV, and using fondant on cakes as gifts is something i enjoy, but can get frustrating; the powdered sugar thing never occurred to me, but explains a lot of previous frustrations!

This is my favorite tutorial I've watch so far !! My issue seems to be the creases I get at the bottom of my fondant cakes and i have always had to cover them with a ribbon, or boarder. I think i will start being more patient and see if it helps :D great tutorial... who cares about her hair, I didn't even notice until i read some comments from nasty people... ugh this is a tutorial not a preview of your cake you will be eating.

Great video. Many cake video on youtube people have their hair down since they are just doing a fun tutorial I don't care since I'm not eating that cake I'm just watching and learning. At the local bakers here the bakers all wear hair nets, so do the people at the counter it is the expected standard. I appreciate that they adhere to the standards when I buy a cake from them
Its an amazing tutorial. I think the people who made this video were more concerned about how she looks pretty and presentable rather than sanitation which is alright with me. She's just showing how its done, not forcing us to eat what she made. No big deal. But I would be quite irritated having to keep pulling my hair back like that while working, but like I said, no big deal. Best fondant tutorial I've seen so far. Would love to get some tips on what ordinary household materials to use in place of those professional baking tools esp if you're going to fondant a cake just one time. thanks

+Malissa H thts what i call exaggerating. gosh she doesnt look gross. you need a mentalkycheck by a doctor. this tutorial is about how you fondant the cake not check how i touch my hair than the cake.
Just a tip, you can use a small spray bottle of water to soften up your fondant while you're kneading which makes it much smoother and easier to manipulate.

Awesome tutorial! You addressed a couple things I have always had questions about. I would say that touching your hair is not appetizing... and to those defending the touching of the hair... you should always practice or demonstrate as if it was how you'd really do it. She should not be touching her hair so much... actually she shouldn't be touching it at all.

Sure, the night before is fine. If you can box it up and seal it with packing tape that's best, keeps it from getting too much humidity in the fridge. And then just put any decorations on when it's time for the event.
I'm doing my first fondant cake this weekend and I was wondering if these steps are correct: after it gets out of the oven, refrigerate it, ice it with butter cream, refrigerate it, fondant it, then refrigerate it and apply the designs. Also if I were to make fondant flowers would I refrigerate them then apply them to the cake, and how to I get the flowers to stick to the cake? Please answer soon! Thanks!

Very informative. Thank you. You mentioned and last part of the video that you were putting it back in the fridge. Wouldn't that cause the Fonda to condensate when you take it out of the fridge. Please advise how to fix that after you take it out of the fridge. Any advice from you would be greatly appreciated. Thank you.
i know this is an old post but oh well... you might see this.... have you tried a product called " the mat" it stops the need for icing sugar or cornflour you can also go and answer the door or the phone even make a cuppa and go back to it ...it is a 2 piece system that has a top sheet of plastic and a bottom sheet of plastic..... it is the best thing i ever found...

It might be because condensation has formed on the fondant making it sticky. Your best bet is to fill a (new) foot from a panty hose with corn starch and lightly dab it to dry it out to smooth. Just snip the foot portion out and fasten the corn starch in with a rubber band. Hope that helps!

You should use a hairnet.with your hand touching the food and at the same time touching your hair totally dissapointed me. If jeans will give u lint,your hair might be just the center of distraction for your cake.
I prefer Satin Ice. It's very consistent and easy to work with.
I'm doing my first fondant cake this weekend and I was wondering if you make the cake, refrigerate it, ice it with buttercream, refrigerate it again, and then fondant it? Also if I were to make flowers for my cake out of fondant how would I apply them to my cake?
As long as it's not going into an outside event in the summer it shouldn't sweat too much. And if it does it's temporary and should go away. It's good to have them cold so you can man handle them a bit when you go to stack them. They won't get as many finger dents that way. Never put sugar flowers or bows in the fridge though or that humidity will cause them to collapse.

hi there, very nice video. question for you or anybody else, as I am a fairly newbie to fondant....I find that my fondant smoothers stick to the top of my cake when I am trying to smooth it...I'm assuming it's because the buttercream is cold???? is there a way to avoid this? thx for any help

Really nice job!! I have a problem with my cakes puffing up when I apply the fondant over the iced cake. I usually put the cake in the freezer prior to covering with fondant...I let come to room temp b4 applying but I still get the puffing with the icing coming through the bottom of cake...any suggestions?

Hi there, thank you for such a helpful and insightful video. I do have one question though. I often find i get bits of lint in my fondant after I've rolled it out even if I have taken care to wipe over surfaces. Is there anything I can do not to et the bits of nastiness in my fondant or is there anyway of at least limiting the fluff?? Thanks for your help.
Hi Sarina, Thanks for watching. You don't have to chill your plain cakes, just make sure they are cool. Then buttercream it, chill and then apply fondant. Any fondant or gumpaste flowers can be applied with piping gel, I'd just do the application at the last moment as the humidity in the fridge can cause them to melt. Best of luck! It is quite hot during the summers where I live. So I need to refrigerate my cake after covering in buttercream till it solidifies. But then when I cover my cake in fondant, there is a lot of precipitation on the fondant and the top develops a very sticky, moist layer which I am unable to smooth down as everything sticks to it, smoothers, fingers everything. Help please. Anyone.

I am not an expert at this, but I think is a bad idea to put it back in the refrigerator. By the time you want to take the cake out, it will start sweating all the humidity and the fondant would probably peel off.

Everytime I put the fondant layer on the iced cake, fondant always become wet and sticky I cant even smooth it with the smoother. Later, elephant cracks would show on some places. Its really ugly :( Please help...

FoxyLexy I will wipe crisco on the counter. It makes the fondant kind of shiny, but it won't stick to the rolling pin or counter. It looks nice too :)
Heather Smith Thank you for the advice! Shortening works like magic! I use corn starch instead of powdered sugar cause it tends to make the fondant much sweeter in my opinion.
