This is a favorite and staple in our home! Very versatile and I make it as a one pot meal. I use cooked hamburger, or chicken or chops cut up. I also add carrots and onions and corn. You can easily double recipe, I often do. I steam for 9 mins and let it stay on stay warm for 2-3 mins. It’s helpful to have everything ready to go. I use butter only. As long as you keep an eye on it, it won’t burn. I also add a T or so of diced jalapeños and some red pepper flakes. We like a little “ kick”, although it’s very mellow and not overpowering . Onion stock would be so good in this! You can buy the little bags of the vercemelli already chopped in pieces! Makes it even easier when you're in a rush!

I'm cooking this tonight! With orzo, scallions, and garlic. Rice-a Roni used to be a go-to convenience food when I had little kids; so glad to see a healthy, unprocessed food version! And I use olive oil and butter for lots of things-best of both worlds! Thank you.

I learned from an Indian lady how to cook basmati rice in the pressure cooker. She said the secret is to lightly sauté the rice in oil first. This helps to keep the rice from sticking together so it stays separated and fluffy. For 1 cup rice, well rinsed, she uses 1¼ cups water, PCs for 7 minutes and does a QR. Prior to this method, my rice never cooked well in my pressure cooker and I gave up. I've made it several times as the lady from India recommended, and it has turned out great every time. Also, fideo noodles could be used, which is just like the tiny noodle in Rice a Roni and is very convenient. I am definitely going to try your rice dish. @@TheSaltedPepper it works for me too and I tried doing the butter on its own and yes it did burn, so I put oil in. The top chef's says it does stop the butter from burning. Love watching you cook even though some of the recipes I don't like, but still watch.
It’s totally true, using a high smoke Point oil like olive, avocado grape etc will allow you to add the flavor of butter at higher temps without burning

I was thinking the same. Being able to cook it in the same pot would be ideal. If not, I figured I’d get a rotisserie chicken and shred it to add it in after it’s done or PC chicken breasts/tenderloins and cut or shred it to add in at the end (I have both the ninja foodi and an IP so I could do both at the same time)
As long as the chicken is cut small enough to cook in the 7 minutes of steam and you decrease the liquid to account for the liquid released from the cooked chicken, it should be wonderful!
This is delicious! I had a little problem with food sticking on bottom of instant pot so next time I will put time down to 5 minutes and/or a little more liquid. I'm still a newbie with the instant pot.
Thanks for that feedback! Were you using a stainless pot? The thing about many of the IP's is the pot seals instead of vents and that changes things a bit because the temp is going to be higher. In my post, I suggest decreasing the time to 5 minutes. I'm glad you liked it though!

The Herb and Butter RiceaRoni is my favorite, im going to try this recipe, sans the garlic as well as adding a bit more butter and orzo pasta, as that is in the original one. It’s easy to make your own. Get the garlic butter and add your choice of herbs. La Grille offers herbs for roasted veggies or you could add Italian seasoning to the dish. You do the erotic in the butter, but as it melts, add what you want. I’m Canadian too!! Welcome.
The only difference is that in many of the IP's the pot seals during steaming, so you won't have as much evaporation and it will cook faster. I would probably decrease the liquid some and cook less time.
I made this in my foodi but it was an epic fail! I have never used the steam function. I set it to vent & steam for 7 minutes. I assumed it would turn off automatically after 7 minutes. Mine did not and I wasn’t paying attention to the time. I turned it off and it took forever to release the pressure. When the pin finally dropped and I removed the lid, The rice was burned to the pan. Do you think my foodi is malfunctioning
It should switch to the keep warm function after the steaming time is done. Are you sure your valve was far enough over and sitting on the little ledge to vent? I've made this (and other varieties) using the steam and have never had that happen. Do you have the 8qt or the 6.5qt? What rice did you use and did you sauté it first? Would you please do a video on how to cook boxed food such as Rice A Roni and other 'quick' foods. I'm a good cook, but my son wants to know easy recipes. g. Thanks for all your help.
This recipes isn't any harder than the box kind, but he can use these same instructions for the box he just needs to adjust for the amount of rice that is in one box.

I know you can cook your own recipes, but some people just want to know how to convert the way a boxed meal is cooked so it works with the Ninja Foodi. There are no instructions for that even with the cook book that came with the Ninja Foodi. Thanks.

I would love to know what you do and how it turns out if you doubled the ingredients. The amount done in this video would only be enough for my husband
It makes 3 1/2 cups of finished rice, that is a good amount. I think the only change I would make besides doubling the ingredients is to steam for 7 minutes and then let it sit with the lid on for a minute or two. It would depend on how long it took to get the countdown to start.
I haven't doubled the recipe, but you should be able to fairly easily by doubling the ingredients and maybe decreasing the steam time just a tad. Let me know if you try it!

Spanish rice you could do with this recipe. Just add diced tomatoes with or without spices.

It is true, to stop butter from burning puts some oil in as well

You could use ghee (clarified butter). It won’t burn then 👍 and then you don’t need to use the oil as well.
I don't know why I don't use ghee, maybe because I don't like making it. LOL

Switch the butter out for Ghee. It has a high smoke point, so won't burn and you do get a butter flavour.

Ok so this looks good. However, we grew up having Rice A Roni Stroganoff which they no longer make. Love to see if you could re-create that. :)

Rice a roni box instruction says butter...and if directions are followed..butter doesn't burn..and the pasta is vermicelli. Half cup to one cup rice
