    My very old Italian mother
    (102 in August), would love everything about this... By the way, she always served pasta two ways while I was a child, with traditional long cooking meat sauce for the rest of the family and butter and garlic for me and Mom!! She can't cook much anymore but I will try my best!!

    Buttered noodles is always a go-to at my house when we’re low on groceries or just too lazy to really cook.. what’s not to like? - butter, noodles, cheese and garlic. This looks amazing.

    The only change I would make is I would have added some of the olive oil you cooked the garlic in to the butter. All the garlic infused olive oil would have just add another layer of flavor.

      @@tmango78 I’d like to think it would, olive oil will help keep the butter from coming to a burn, but. With the oil I keep the heat to medium so it doesn’t reach the smoke point and make everything bitter. when I make my garlic shrimp pasta. I marinate the shrimp in garlic and red pepper over night. Cook it in the olive oil on medium 6-8 tablespoons roughly per 3/4lb of shrimp (41-50’s aka them small boys) transfer to the butter once it’s become golden like Sam did.

    I'm not above chopped garlic in a jar - but I find the flavor to be weird/different than fresh garlic. The jarred variety has a weird flavor from the brine or liquid.

      Its the Citrus acid in the liquid they use as a preservative.

      I’m ordering these noodles today. We don’t ever see these in our markets in the US. Maybe a specialty Italian grocery store but Amazon is where I found them. Pricey but hey we’re gonna give these a try.

      Same thing, every kid where I live orders tomato spaghetti (not an italian thing, usually mince and a pasatta kind of sauce) and bread coated chicken

      It depends on your parents really. I was never even told that was an option at restaurants. You had to pick real meals off the menu. I’ve never seen butter noodles in a real menu, I have seen fussy kids order it though because it’s so easy to make they usually do it because a spoiled kid ruins everybody’s day, not just that family.

      Yeah, I assume it’s an American thing - I’ve never seen it on a menu in the U.K. or Italy. I knew a french guy who ate pasta with butter and salt, but the butter was just melted on the hot pasta.

      Salad with taco filling/ toppings is extremely good for keto, so is any steak or other slab of animal goodness.

    I've been basically making this same thing for 30 years but without Anchovy paste, instead add a small amount of sesame seed oil.

      Yep. My dad made this for me as a kid (30 years ago) and I make it for my children now! With sesame oil. But I'm sure it's great with anchovy paste.

      I make this all the time now. Love it! I just chop my own garlic for all of it. I didnt like the way the jar minced tasted. I think it was minced in olive oil, it did have a sweetness to it i couldnt get into. Not sure if other jarred would be better but i definitely dont mind just choppinf up fresh garlic. I use at least a whole bulb of garlic for a one to two serving unless its a very large bulb then almost the whole thing 😅. One to three cloves for the sauce the rest for the crispy. I think im gonna go make some now. ❤

      🤔I'm old enough to be your mother and only within the last 2 weeks have I ever made garlic noodles...I must say I impressed myself with 2 bulbs of garlic, not cloves, 1 stick of butter, and 2 lbs jumbo shrimp with a few thai red chilies, OH SO GOOD!!!😉👍

Wonderful...being Italian we've always had it every way growing up and it's cheap-my dad used to hand make all different pasta (he was French) my mom the Italian..always said , too much work lol, she sai I use a good box brand! LOL My mom, I love her, and miss her!

    Beautiful recipe. Have done similar before but this has taken it up a notch in a couple key ways: the crispy garlic (yes!!), and the somewhat over use of butter (yes again!!). Most of my anchovy, garlic, red pepper flake recipes also include lemon juice and grated lemon peel. A touch of lemon peel with the crispy garlic?

    Wanted to make it for dinner tonight but didn’t have anchovy paste so I used fish sauce as a replacement . I also cooked some shrimp in the sauce mixture before adding the noodles and it added an additional twist to the dish.

    Been cooking this for years with leftover pasta. When it comes to greens, if I didn't have parsley, I used cilantro/green onions/ celery tops, the new thing of anchovy paste is something worth trying.

    I just attempted this and managed to screw up nearly every aspect of it - and it was still f**kin fantastic! I couldn't find anchovies paste so I minced anchovies instead - and then I discovered I had run out of crushed red pepper flakes so I squirted in some sriracha instead :) and I managed to burn the crispy garlic. It still turned out wonderful. Next time I'll have the anchovies paste and red pepper flakes on hand and watch the crispy garlic more closely .. but I'm amazed at how good this was even with all my goofs.

      He doesn't want a strong garlic flavor. Fresh is good if you want a strong flavor or are roasting it or slow cooking it. Otherwise the jarred stuff is ok.

    My Canadian wife fondly remembers the "white dinners" her mother made. Boiled cod, mashed potatoes and parsnips, and, um, I was able to forget the rest. Beige was too adventurous for them.

      I’ve never not seen a kid want either chicken nuggets/ tenders, buttered noodles or pizza. Including me. It’s always one of the three. To be fair everything else on the menu for kids is nasty and they can share with the parents if they want to.

    Noodles and pasta are common food products that people often think are the same thing, but beneath the surface there is a lot that differentiates them.
    Noodles and pasta differ primarily because of their ingredients and the type of processing involved.
    Noodles are usually made with flour milled from common wheat. Pasta is processed from durum semolina, which is coarser than typical flour. However, that difference is not always so cut and dried.
    Pappardelle are large, very broad, flat pasta, similar to wide fettuccine, originating from the region of Tuscany. The fresh types are two to three centimetres wide and may have fluted edges, while dried egg pappardelle have straight sides

    Yes, and garlic goes from golden to burnt very quickly. I like to use a little of the pasta water as a thickener.
    Great recipe for adults, but I don't know any kids who like garlic, parsley, red pepper flakes and anchovy flavours. Kids have very simple, basic palates and this is likely too complex for them. It's good for me, though.
    For the kids, pasta, butter, maybe some cheese, some salt and serve.

    Creamy finish option: drain pasta, reserving some water. Add butter to pasta in hot pasta pan, drizzle in some pasta water while stirring the heck out of it. Instant butter cream sauce. Finish the same as Sam.

    From an Italian family, I think I’ve never ordered butter noodles in a restaurant…. BECAUSE MY PARENTS NEVER TOOK US TO ONE! Closest we got was a wedding. But…as children we all loved noodles with butter and some olive oil, the twist was we loved it with a pile of parmigiana cheese and hot pepper flakes on top. It had to have enough peppers to make our ears itch from the inside. That’s my daughter’s go to anytime she’s hungry but she changes it up a bit and now adds sliced home made sopressata. I have to admit, it’s delicious!

    I’ll never do regular buttered noodles again. Oh, and the crispy garlic? Love that you did this. I discovered this by accident a few years ago because my pan was a little too hot, not enough to burn it, but enough to toast it and make it crispy! Adding that to spicy buttered noodles? Good lord... Thank you again, Sam, for your ingenious creativity!

    Kids in France love buttered noodles with chopped ham! My husband, who is 71 years old, has fond memories of buttered noodles with ham.

    I legit have never heard of ‘butter noodles’. Maybe because we don’t have it in the British countryside? I would have at least expected to hear about it when I traveled and lived in the city. One thing’s for sure, after seeing this... I wanna try butter noodles!

I’m going to google them and get to the bottom of it! Haven’t been to the US in years now, hope the food is still just as good, British food always seemed dull when I arrived home from every trip back in the day.

    I like letting some of the noodle cooking water dribble into the pan too. As it reduces it makes everything really creamy.

    I just wanted to point out that the water in the chopped garlic is useful in other applications where you want the taste but not necessarily the solids of the garlic. (soups, sauces etc.) just an observation since there will be no waste that way.

    This is an excellent recipe and I make it about every 2 months. The only addition I make to this recipe is incorporating about 1/2 a ladle of pasta water because everything tends to bind together when it cools down. The pasta water fixes this.

    I made something similar all the time when my kids were growing up. Just wide egg noodles, melted (not burnt) butter, Italian seasoning and parmesan. Served it with kielbasa and vegetables almost once a week because it was filling, cheap and delicious. They also loved angel hair pasta with a stick of butter and a 14-16 oz can of tomato sauce and the same Italian seasoning and parmesan. I still eat those sometimes today, I just make a whole lot less and use sautéed garlic. No way would my kids or I eat red pepper flakes, crispy garlic, anchovy paste or burnt butter.

      I honestly don't know any kids that would eat this personally. Doesnt mean that none would. And your recipes wouldn't go over well either. Your as a matter of fact statements are very rude and are just YOUR experience and doesnt make it fact for everyone. And you are quite uneducated about browned butter and anchovy paste. Browned butter is not burnt butter. Theres a huge differnce the main difference is its browned..... not burnt. You can easily burn it by letting it brown too long or too high of heat. Browned butter is done low and slower. And anchovy paste used in recipes doesnt taste like you added fish to it. Anchovy paste is in many things you probably do eat, like worstishire sauce and ceasar dressing among many others. You may want to dial down your ignornace. And your welcome for me at least telling the other commentor how ignornat they are as well. Unless you are finger pointing cop caller, manager getting complainer as well as being a my way or the highway bitch.

    Never heard of butter noodles. My children ate what was prepared for them. They never squawked about it either. I made homemade chicken and noodles, beef and noodles, and spaghetti with parmesan and extra virgin olive oil. They loved all of these noodle dishes. But I never made butter noodles.
