Hi Mary, I haven't commented for quite a while, I watch constantly though. This video I want to comment on, this was great. I haven't had rice a Roni for a long time but I do like it very much, thanks for bringing it back to memory. As usual homemade is always better and this looks so simple, just like the boxed. I have seen the broken spaghetti in the stores and wondered what to do with it besides throwing it into soup or something. This is my next side dish, making this sometime this week. Thanks for the memories. Charlotte
We make this all the time! Instead of the thin spaghetti, we use fideo spaghetti, which I find at any grocery, particularly in the Hispanic section. I also just use a bouillon paste and garlic powder and onion powder. Put it all in the instant pot to cook on the rice setting…works great! Orzo is also a good sub for the fideo cut pasta. Always a joy to watch your videos!

@@Gracian40 to me, it does. We have not bought the packaged Rice-a-Roni in years! I saute equal parts of basmati rice and fideo pasta in butter. Add some garlic powder (I just eye ball everything, but approximately 1.5 c of rice, same with the pasta, 1/2- 1 T of garlic salt and chicken broth to cover the rice and pasta by an inch in the Instant Pot. Seal the pot and push the rice button. Fluff then serve😃
You read my mind, Sweet Mary! I just made up a bulk batch of "Rice-a-Roni" dry mix with a bunch of open bags of Fideo and seasonings I had in my cupboards. I just went to the grocery store (Walmart) and noticed the price jump on those prepared boxes. I know they aren't part of a traditional foods kitchen, but they are definitely convenient for an easy weeknight meal. They're just not convenient for my food budget 😲. Thank you so so much for all your videos and tutorials. PS: I would love to see a DIY "Pasta Roni" dry mix video, I've looked all over the interwebs for a recipe but haven't found one for just a dry mix.

I would like to be able to make a version I could put on the shelf (not canned) to grab for a quick meal without all the ingredients of the commercial product. Again, I want to thank you for all you do to help us become better homemakers.
Hi Mary, Thanks for sharing your version of homemade Rice-a-Roni. I make it too very similar to yours but add chopped cooked chicken when we want Chicken Rice a Roni, and Ground Beef when we want Beef Rice A Roni. Mixed veggies and dry mushrooms make it a special meal. Vermacelli is very inexpensive as is thin spaghetti and both work well for Rice A Roni. I will try adding the Tumeric next time I cook this dish. The boxed type is a great deal at under $1.00 for a back up meal for our pantry.

Looks like a much healthier way to prepare Rice-a-Roni and I'm sure that it tastes better than the box. Although I must admit, I keep a few boxes in my pantry for a really quick side dish. I will plan to prepare the homemade pilaf though. I always enjoy and prefer cooking from scratch. Thanks, Mary.
I love rice-a-roni! I buy Skinner brand fideo noodles at HEB. I use fideo for homemade chicken noodle soup that is similar to Lipton's boxed chicken noddle soup. I'd like to suggest using arborio rice, which is a small flat rice for a little different texture. Definitely going to try your recipe. As always, thanks for sharing, Mary.

I’ve just made this. I amended it a little and blended the onion, garlic, and turmeric with about a 1/2 of broth. Learned that from a Mexican rice method that really makes those flavor pop

Looks like a much healthier way to prepare Rice-a-Roni and I'm sure that it tastes better than the box. Although I must admit, I keep a few boxes in my pantry for a really quick side dish. I will plan to prepare the homemade pilaf though. I always enjoy and prefer cooking from scratch. Thanks, Mary.

I love rice-a-roni! I buy Skinner brand fideo noodles at HEB. I use fideo for homemade chicken noodle soup that is similar to Lipton's boxed chicken noddle soup. I'd like to suggest using arborio rice, which is a small flat rice for a little different texture. Definitely going to try your recipe. As always, thanks for sharing, Mary.
I've made this for many years, to use up my own dehydrated veggies, concentrated broth & bulk rice. My kids & I love the versatility.

I’ve just made this. I amended it a little and blended the onion, garlic, and turmeric with about a 1/2 of broth. Learned that from a Mexican rice method that really makes those flavor pop

Looks yummy! You mentioned using other rices. With some adjustments on the cooking time and how to accommodate the pasta accordingly, I think I can try this using brown rice!

Thank you Mary! I used to make this when my kids were little. Haven't made it in years because I don't do boxed foods anymore. But I'm really excited to try this homemade version! And I bet with some cheese and some kind of meat added it would be wonderful stuffed into peppers for a main dish!
