I know this chef had a scandalous past but I still loved him and miss his show so much. His enthusiasm for cooking and learning all about food is unparalleled.
That "scandalous past" was only ever alleged, never proven, never got to the point of charges filed or to a court, where they might be proven or where he could defend himself. So take it with a grain of salt.
Julia Child, the Galloping Gourmet, during the week, Jeff Smith, Mary Ann an Italian chef and many others on Saturday. I made the cornmeal mush and it was delicious.
You can find a Galloping Gourmet and a Julia Child playlist on my channel, I don't host those videos on my channel, but I thought somebody looking for Jeff Smith might also be interested in them. :)
That's the recipe for the muffins my mom used to make all the time! She would add in blueberries or raisins, but yes, the longer it sits and ferments the better it gets! By the 4th or 5th day it's AMAZING! I should have known she got the recipe from Jeff Smith - she was always watching his show
I remember being 5 or 6 years old (I think?) and watching this at my grandparent's house - probably alongside Double Dare or something like that. We didn't have cable at home, so I only saw it when visiting.
Best dried chipped beef is from Knauss, formerly of Quakertown, PA, or Alderfer's, in Harleysville PA. And creamed dried beef on toast is a good "yardstick" dish when judging how good a diner is.

Stouffers now makes a frozen creamed chipped beef - it's delish!!! And yes, I put it over an egg on top of a piece of buttered toast - it's great!!! (or sometimes I pour it over mashed potatoes)

I made the congee stands a routine when I was in the Philippines for a while. It's an easy thing to prepare with an insta-pot these days, and a great way to use up leftover rice and whatever. Incredibly simple, incredibly cheap, and often quite comforting.
Instead of letting the batter live in the fridge for weeks using it a little at a time you could just bake the entire thing in one sitting and freeze them and take out one each morning as needed. Much better use of space and muffin batter, I think anyway.

Unparalleled. Anthony Bourdain was awesome, but no one could beat The Frug!

Jeff passed a while back. He had some problems too that i wont get into.
Did he really film every episode in 1 take? Amazing
No, there was a lot of preparation off camera, and before the camera started rolling.
I've got a bad habit of watching these types of videos while fasting! This can cause psychosis!
For those wondering, abalone jook/congee really is tasty

Whos gonna tell him carbs and sugar are worse for us?
Back in the 80s and 90s, fat was the enemy. In the '00s it was carbs, then trans fats.
