  • Lidia grew up playing hide-and-seek in the corn fields surrounding her home in Pula, Istria. Making polenta at her mother’s knee was almost a daily activity. Lidia teaches how to make the best basic polenta, country style. She then demonstrates a family favorite -- sauteed polenta with field mushrooms -- and follows it with the perfect dessert: polenta with honey and fresh strawberries.

    I'm 82 have been eating polenta all my life my grandmother made it like you and when I made it for a friend she told me I made it wrong. I wish she could watch you. Also ate for breakfast. Thanks for sharing ALOHA

    I get a kick out of her phrases, like the sauce "is densening" and "You notice it densing up"
    Gotta love that use of language. :)

    Love you Lidia. My family is from abruzzi. The way we ate polenta was we made a tomato sauce with pork pieces and got a long wooden slab on the table and laid out polenta and spread sauce and chunks of meat in sauce on polenta and and we all ate from wood long slab was so fun and good! U take it to another gorgeous level

    In America, it's called "cream of wheat", in Russia it's called "mannaya kasha", a breakfast with milk and sugar

    Back in the late 1960's I was newly married and my late husband wanted "corn meal mush" every morning for breakfast. Of course it was made with grits which is basically the same as rally corse ground polenta. I mixed water with the grits then added to boiling water and never gad a lump. Of course the next day i would slice the cold grits and fry with syrup. Haven't had it since.

      @@lunnafraticelli6131 Very straightforward: make the polenta, stir in chopped figs, grated cheese, butter, some rosemary and basil if you have it, pour into a 9x12 pyrex and bake 350 for 20 minutes ;)
