I loved the Frugal Gourmet back in the day. He taught me a lot about cooking and the history behind the dishes he made. I always liked how rough around the edges his cooking style was because it reminds me of everyday cooking. Thanks for uploading these gems!

Last hand written letter I wrote years ago was to Jeff. I told him him I didn't believe the accusations and even if they were true, God is forgiving. I went as him one Halloween. Loved this show. I taught my stepdaughters so much about cooking because of him. It took them 20 years but they now love cooking and wine.

It's funny how he talks about Tabasco and little silver holders and how common it is getting. I haven't gone into a restaurant that hasn't had Tabasco in a condiment holder since the 1990s.
My late husband who was Creole used smoked pork neck bones in his red beans. Sometimes I would use chopped up onions and green peppers in the rice at the last minute.

I used to watch this guy when I was a kid also. I love New Orleans but of all the wonderful food down there, he picked some of the worst ones, imo. I wish he had made some chicken gumbo or something.

Seems to me there ain't more than 1 theory. It's leftovers.. Sooo. You can't hardly do it in a show and do it any justice. Because you have no "leftovers"
I thought he was saying that it was _historically_ leftovers, not that you must make them from leftovers today. They certainly are not made from leftovers in the best New Orleans restaurants.
This is a good example of what happened to his show as it went on over the years. Here he becomes pretty much a food presenter and a hawker of his cookbooks. The food is obviously wasted because he doesn't finish the steps. So in the very first dish, which needs to be sauteed for much longer and in my opinion a different order, he just dumps more stuff onto it and then he'll present the finished product. Meanwhile the ingredients in that pot have to be thrown into the garbage. There's no resurrecting it.
I love Jeff. I am a native New Yorker, but i've lived in Chicago for over ten years now. I've had numerous meals in the city.... Chicago is crap compared to NY. It has to be the most over rated city in the US. As someone who has lived in Chicago for a long time now, it hurts to say it, but, it is true.
He didn't make gumbo in this video, he made Jambalaya. Using tomato would make it Creole though (he didn't specify that it was a Cajun recipe), which makes sense as this episode is focused on the city of New Orleans.

Sounds incredible. My dad loved any kind of smoked pork, esp smoked pig’s feet. You couldn’t get near him for hours after he ate it!
Made red beans & rice like this once, with Alton Brown’s recipe, which was essentially the same. Great stuff!
