  • French Onion Soup 🤌 I love French onion soup and will order it when it's on a menu but I'm sure everyone can agree there's nothing more disappointing than watery "broth" with a few tiny pieces of onion in it. French onion soup should be silky, loaded with flavor, swimming with caramelized onions, and covered with bread/cheese. The flavor on my soup is amazing. The onions are caramelized low and slow for almost 2 hours. I just stirred them in the kitchen while I was cooking other things. Typically topped with gruyere cheese, you can also Swiss, fontina, or mozzarella. I obviously always use my jarlsberg cheese in lieu of gruyere because the flavor is so similar. Jarlsberg is a cross between a gruyere and a Swiss. It's a fraction of the price of gruyere, and I am just not spending $10 on a small hunk of gruyere.
    You can top it with chunks of baguette, but I topped mine with homemade sourdough. I just baked fresh this morning. Any crusty dense bread will do, though. If you want a French onion soup that would rival a Bistro, then this is for you.
    French Onion Soup:
    3 lbs onion, I used yellow onion
    4 tablespoons butter
    2 tablespoons olive
    Cook the onions down for an hour to two hours, stirring often so they don't burn. Until they carmelize to a nice brown color.
    1/4 cup flour
    1 cup marsala wine
    4 cups beef broth
    2 teaspoons beef boullion
    1 1/2 cup chicken broth
    2 sprigs fresh thyme
    2 bay leaves
    1 teaspoon worcestershire
    Salt to taste ( I also added a little more boullion to taste)
    Simmer for 20 minutes or so, dish into oven safe bowls. Top with sourdough cubes and shredded cheese.
    Topping:
    Sourdough, cut into cubes
    Jarlsberg, shredded (can use Gruyere, Fontina, Swiss, or Mozzarella)
