I just baked this bread this afternoon, and I'm amazed at how it turned out!! I'm really bad at baking bread, and I didn't knead it properly so it got all sticky, and i thought for sure I'd ruined it, but it just came out of the oven and it's actually SO GOOD! I baked it in a cast iron pan since I don't have a steamer lol. Def gonna keep this recipe around! Thank you Helly 💖💖

In Yemen where my family are from, this is called kubaneh. Only we have a special air tight round baking tin and it cooks in its own steam but inside the oven. The only difference is the color, the oven gives it that golden brown outer crust. But method and texture is the same otherwise. I ❤️ this bread so much! Reminds me of my childhood. If you have a stand mixer with a dough hook you can do the making the dough part by mixing it on slow for about 2 mins and medium/fast for about 2-3 mins and do the same process after adding the butter.
Reason for adding the butter after the first procedure is because when dough contains fat (butter, shortening or oil) and it is more than 8-10% of the flour it will have an effect on the gluten bond; which will make the dough not as springy and you will get a flat bread.

this reminds me of the little buns Chinese restaurants give in my country. I've always been amazed by how immigrants from Canton tropicalized their dishes in Venezuela during the 40's and 50's and created something so unique. I love my Venezuelan-chinese food with a passion

I love Ethiopian food! I only tried it in a city close to where I live, but it was delicious. I didn't know you guys had fluffy bread too - we make sweet fluffy buns and steam them or bake them here. I live close to the Alpes and we trsditionally put plums and stuff like that inside. They're also really good with vanilla sauce.
