      One of my Haitian friend does remove the fat, but when fat is cooked with the meat, it's so much better. The old timer don't remove the fat. Manje ayisyen se pi bon bagay

      GodIsLove811 its the juice from the bitter(sour) orange. It helps with removing the smell from the meat and helps the meat get color

    Mmmm! Griot!!!! I tried this for the 1st time last year at a Hatian restaurant in NYC & I straight fell in love. Thanks for the tutorial:)but wait...you're not using all that good seasoned meat for Griot? Is it for a stew? I'm really stumped on this one?
