    I did it. Best oxtail recipe ever! I made a couple of changes... I used shortribs because that is what I had on hand. And instead of brown sugar I used coconut sugar because it is low glycemic. To finish, I transferred everything to a big pot and finished by cooking in the over at a low temperature. OMG... the meat was so tender and flavorful. I'm going to get some oxtail and do it again in a couple of weeks.

    Gill, I made this recipe about a year ago and it was EVERYTHING. It was my first time making oxtails and I love them so much. It ain't right if it isn't this way. I had to come back because I'm making them again. I'm so excited. Thank you.

    I love your videos❤❤ I'm Haitian myself and I'm learning how to make haitian food. But one thing I don't see is any haitian breakfast food lol, like eggs with onions and bannann, spaghetti with eggs, sausage, zaboka, etc. Tout bagay sa yo. I would love to see you tackle those recipes

    I woke up and clicked this so fast. I absolutely love cleaning my meat, rice, and veggies. I clean my food for spiritual reasons tho...it feels like im washing off the bad energy from the people who process the food. Thank you for this video!!!

    I'm Haitian and every body cooks differently, my aunt is to me # one in oxtail, same taste that I was raised, I'm 60, and I try to be like her. No sazon or sugar in the way we marinate. Next day we.boil it for 2 hour's or until very tender then we make sauce, tomato paste etc.etc. till its ready. Ong, I'm in heaven ,, me and you are are satisfied and happy even it's cook differently. Thanks

    I love your recipes. Just make the oxtail, rice with pinto beans also your recipe and your Mac cheese. 5stars to anyone inquiring . First time making it and my family and I loved it. Similar to Bahamian ingredients.

    Wow, it looks so delicious, since it's so expensive, it has to be done right. I do mine by boiling first with all the spices for 1 hour or more, sear them and make sauce with okra, OMG, I love that. Meat falling off bones😄.

    I love love oxtails just like you 😊, I boil mine after it has been seasoning overnight until they are soft, then I sear and make the sauce like you, when I see the sauce is half, I put my okra in it, and let it finish cooking. OMG, it's the most tastiest with white rice only. Loveeeeee it but so expensive now. $32 for family of 3. Twice a month is good 😃🙏🌹🇭🇹

    When I ate meat I hated oxtail, but my hubby is a HUGE oxtail fan 😂 soooo I am definitely going to make your version of Haitian oxtail because you never disappoint 👌👍

    Note that the sugar can be added to the marinade ...allowing it to infuse the flesh and when you braise locally engage the Maillard reaction (which creates molecules of caramelized flavor into the meat).
    Also, I would put the tomato paste onto the oxtail (I do that for any meat that I am stewing with a tomato base) in pats and AGAIN add tomato paste to the water that I add toward the final stewing process.

      I use red wine and queezed orange juice. I know that sounds crazy 🤣🤣but I've seen a vid on here someone seasoning oxtails with honey and yellow mustard....

      Depending how you cooked it... you throw that with some red mash potatoes, some corn on the cob. Or can keep typically Haitian with white rice/rice n beans.

      She didnt use the hot water first. Its not necessary she just boiled it for 3 hours

    Great video! Is Haitian Epis the same as what Jamaicans refer to as green seasoning? I’ve seen a few Jamaican videos on oxtails and they use “green seasoning”. Always wondered if they are the same thing? Thanks!

    Cleaning and washing our meats is very important to us because you know how many hands it took before it got to you and germs etc. but 1st, you gotta let it soak in colds water with vinegar, lime or sour /bitter orange and you'll see all the crap float to the top. After that you wash it as she is doing and rinse very well in cold water. Than dry it 1st before seasoning. You don't need sugar. Do you know you could get the same result using a cooker pressure for 30 minutes.

      Haitian Epis is what other Caribbean people call green seasoning and Latino people call Sofrito.
      Maggie is the brand of seasoning that she uses. They have chicken and I think beef as well.

      @@heatherdashrae2 each person adds different things but you use parsley, scallions, scotch bonnet peppers, vinegar (either white or white apple cider), green peppers and some water.
      I don't know if she has a video showing you how to do it? You can definitely find numerous videos on how to make it just type epis in the search button

      ive done it it an electric skillet, it always comes out the best that way for me. and ive also done this is a crock pot and just follow the ingredients to the t the best you can and it will come out great .

      Not for Haitians.Haitian and Jamaican food has entirely different flavor profiles. Onions are like holy grail and go well with the combo of herbs we use. Meat is meat. Its the flavor profile that matters and makes the meat taste like something. Hence why every country uses the same meats rice etc..but it all tastes different. You can flavor meat however you like.

    Will it really throw off the taste if I don't use the Haitian Epis? I really like how simple the recipe is but probably won't be able to get the epis.

      It wont throw off the taste and will likely still be good but its not the same. I would add fresh scallions,garlic and some parsley if I have no epis cause those are the main ingredients of it. I do not always cook meat with epis.

      Maggie is used in a lot of African and Caribbean food - stews. it had a great flavor. However, there’s a lot of MSG in it. I’m not a fan of MSG.
