This stew is so good over rice and as you said most Haitian restaurants make it oily but when you cook it you can make it better!! I cooked this as a Bahamian where I loved it so much and shared it with some Haitian co workers and they said you are now in the Haitian family!! it was really good! us Bahamians can cook anything you show us and add out own seasonings to make it perfect! Legim militon, cabbage, eggplant spinach and watercress topped off with mixed vegetables any meat beef, pork and that is it for me. When I am done I squeeze lime juice or add pikliz for acid and heat. That piman is key

Hi there, I'm not sure how that will work out, but let me know. I'm referring to the steps you're taking instead of removing meat. The greens I think you're seeing are the bell peppers. All the veggies massed up create different shades of colors, and as it cooks down with the meat, it changes the shades to darker tones.

You have to search online there are Caribbean markets in Orlando. Do a search for "presidente supermarket" they have Caribbean food and I know they have locations in Orlando. You can find green papaya at Walmart in the produce section. Publix may have it too but I know Walmart has it for sure.
Hey Jennifer, it makes a difference to me but if you don't have it just use what you have. You can find green papaya at your local Walmart, publix, Spanish or Caribbean markets. I hope you find it because it's sooo good in it.
If I wanted to use turkey neck instead is it the same process as you cooked the beef? Let it cook for 20 minutes first add veggies and let it cook again for 30 minutes? And I never heard of papaya in legume. You learn something new lol
With the turkey neck let it cook for 30mins first then carry on with the same steps. With the turkey neck you may need to add a little more water depending on how they're cut. My mom always add papaya to hers but not everyone adds it that's why you probably haven't heard of it love.

Where can I find green papaya? Orlando is non-existent with Caribbean food and markets ....I miss my home of NYC..
You have to search online there are Caribbean markets in Orlando. Do a search for "presidente supermarket" they have Caribbean food and I know they have locations in Orlando. You can find green papaya at Walmart in the produce section. Publix may have it too but I know Walmart has it for sure.
Blasphemy they have a gang of carribean markets especially in Pine Hills

Hey Jennifer, it makes a difference to me but if you don't have it just use what you have. You can find green papaya at your local Walmart, publix, Spanish or Caribbean markets. I hope you find it because it's sooo good in it.

Instead of using oil with the tomato paste can you use butter instead?
Yes love, you can definitely use butter. Just let the butter melt first before putting in the tomato paste.
What was the total cook time?
If I wanted to use turkey neck instead is it the same process as you cooked the beef? Let it cook for 20 minutes first add veggies and let it cook again for 30 minutes? And I never heard of papaya in legume. You learn something new lol
With the turkey neck let it cook for 30mins first then carry on with the same steps. With the turkey neck you may need to add a little more water depending on how they're cut. My mom always add papaya to hers but not everyone adds it that's why you probably haven't heard of it love.
