Will definitely be trying this legume recipe. I love eggplant, but the only thing I know to with it is fry it. I am Barbadian (Bajan)so the only thing I will probably do different is to make and use my own homemade Bajan Green Seasoning which is very similar to your Haitian Seasoning

My husband taught me how to make it and it’s my favorite dish , I’m not Haitian but I love the food .. we used crabs,oxtails,chicken (not all together) theirs so many different meats or seafood you can add to it .. great dish

Hi there! the meat and veggies will give you most of the liquid. I didn't add any other liquids, but you can definitely add about 1/2 a cup of liquid if you wish. you can add it once you add the mashed vegetables and meat together. Thank you for watching!

I didn't add any water and yes you can use fresh spinach. The meat should release enough water, but if you do add water don't add anymore than 1/2 cup. you don't want the legume to be watery. Good luck and thank you for watching! Keep me updated

For the meatless version: use 1/3 of the seasonings/spices, oil and tomato as instructed and lime juice is optional. Add the oil and 1/2 cup chopped onions, cook on low for 2 minutes then add in the homemade green spice, cook an additional 2 minutes. Mix the tomato paste with 2 tbs water and add to pot. Add all the spices. Proceed as Lamise did, when you add the mashed veggies to the pot, add in the spinach and carry on as she did. The cooking process will be 5-10 minutes less. It's tasty and my family love it. ------- If you like sea food ( crab, lobster, fish): use lamise's seasoning measurement. Prior to cooking, clean your sea food, marinade with lime or lemon juice and a bit of seasoning mix and kept refrigerated. Add the sea food, submerging it in the pot for the last 15 minutes of cooking. Enjoy!

If you cook them separately, the meat's flavor won't marinate into the vegetables. You want the veggies to taste like the meat
