Chef, mexican here! You can also soak the rice and almonds in hot water overnight. It will work better and blend even easier. Results are breathtaking.

I want to try the mexican version. The salvadorean version is made with the seeds of a fruit called "morro" or "jicaro", it's nutty and sweet It's blended with sesame seed, peanuts, cinnamon and sugar. I hope you taste it some day chef John!

Horchata typically has milk (I'm Mexican). I'd really recommend adding the milk. It's like adding milk to tea! Sure tea is good, but milk tea is da bomb.
Boiling the almonds (or blending them and adding boiling water to them/cooking the blended almonds) should be fine for the taste. it shouldnt change anything dramatically. You could also experiment with other nuts, although it would change the flavour a bit, of course.

Boxs I honestly am not qualified enough with cornstarch and/or nutstarch to give you a proper answer! I never wash my rice, even though I've been told I should when only preparing rice (removes excess starch and cleans the rice). I would just trust Chef and follow his recipe ;) or you can always try it out yourself, I am sure if you don't put TOO much starch it won't ruin the recipe! Remember, nothing wrong with tinkering recipes!

And I've only ever used a sifter to strain out the grit and I had to do it 4 times and it STILL had a lot of gunk left on the bottom. And I've always thought that I needed cheese cloth but I have no where to get it. Super glad you made this fast, easy way. Now all I need to do is find cheese cloth
