@@BrunchBoys Unrelated to Hamburgers but I was told by a Friend about a popular Steakhouse in Midtown that specializing in 72 Hour British Style slow-roasts that sounded fascinating despite being a bit expensive. I can’t remember that name for the life of Me but thought that perhaps You might know about that Steakhouse? It’s at least meat related and sounds delectable! Love the channel, Man!

Inglese The cooking you see at little spain is not the best. The flame must never reach the meat directly. In general, if the surface of the meat becomes too dark and crunchy it means the meat is burned. Cooked and burned are different things. The griddle is better than the grill because it distributes the heat more evenly. In case of smashing you have to flip the burger quickly because pressing accelerates the cooking process.
Being a burger lover who hates mayo is maddening because 90% of burger places feel they have to have a “special sauce” on their burger which invariably means seasoned mayo.
