They do this in restaurants for many reasons. 1- looks fancy. 2-looks visually more food on plate than scrambled method. 3-cooks very quickly. 4- comes out of pan all in one piece so easy to reuse pan for next one

It's crazy one the different methods of cooking eggs makes the egg taste differently. This method look good, fancy and tasty.. But in fact it is not as tasty as other "less fancy" methods
depends on the kinda eggs you’re doing but the burners actually aren’t that high actually for the type of stove. if you’re cooking something like a sunny or over easy you wanna have a lower heat as it’s spending more time and can develop a bad taste and texture. this egg is made so fast it doesn’t spend the time to develop that bad taste and texture

Butter, however, has been proven to be unhealthy because it is a saturated fat that clogs your arteries. Vegetable and seed oils, on the other hand, are unsaturated fats.
