Xanthan gum is a low-carb thickener that is used to thicken liquids instead of flour, and also used in baking to help hold things together since you don't have the sticky gluten from flour The sweetener she used was allulose. You can buy both from Amazon.

We made sugar free jello and topped it with heavy cream that we whisked up in a cold metal bowl. That was my Mom & mine’s dessert back then.🥳😂
My mom absolutely loves Keylime so I switched the lemon ingredients for key limes. I squeezed and zested them myself LOL! I usually make stuff from a box so it made me feel like a real pastry chef LOL! It was absolutely delicious. I made a double batch of the filling and put it in a 10 inch spring form pan. I made the same amount of crust as the recipe calls for. She could not believe it was sugar-free, low-carb and gluten-free. Yummmmm!!! Thank you for this awesome recipe!! ❤️❤️❤️

I finally got around to making them for the second time. This time, the filling was way thinner than it was before. I guess I'm just going to have to make them for the third time☺

Dang I can’t post a pic! I was thinking I needed something raspberry lemon in my life and I seen this.. Currently in the oven.. I added 4 Oz of cream cheese and sunk fresh raspberries in the filling. Thank you for the recipe... even though I messed up and ended up with all the filling ingredients in a bowl which I then dumped in a pot all together wet and dry lol it still thickened.. lucky lol ty :)

Looks delicious. But please use Avacado or Real Olive Oil cooking spray. The other cooking oils in spray or natural form are garbage , especially on Keto.
Your printable recipe on your blog does not match your video or recipe on blog. We had quite a time. For instance, your printed instructions speak to egg yolks but not whole eggs. In the printed recipe you add xanthum gum and gelatin much later. They were still good though. Love your channel!
I just finished this recipe. The printed recipe does not say when to add the eggs and states to strain the mixture. When I did this I did not have enough of the curd left. I would make them again, but follow the video, not the written instructions. The curd itself was absolutely out of this world.

The lemon bars were awesome but I would suggest when making in 8 X 8 pan don't use the full recipe of the crust. The crust was a bit thick.
QUESTION: have you a list of NUT ALLERGY Keto desserts (or other food)… can’t have nuts… allergic… so no almond flour!
