    You gave some advise my grandfather (my dads' dad) taught my mother many years ago. Don't boil the beans before they start to absorb water and never season until the are nearly done. My mother is from the city and my dad is from Appalachia mountains WV. She is still alive and still teaching me new things.

    Arnie , you are killing it my man! I have been watching for not to awfully long but you now have a Super Fan! My family and I cooked in Chuck Wagon competition’s for years, our beans are prepared very similar, I really appreciate what you are doing. Keep it up !

    I love this guys channel. I just found him a week ago and have watched several of his videos. I am making these beans right now. I love Mexican Beans. There was a restaurant close to use named "Jose's" and as you walked in the had a pot of beans and bowls and spoons you helped yourself to. I would rather have just ate the beans and not even ordered food. This recipe is the closest I have found to what Jose's used to serve. After the beans are ready I am going to make Mexican Cornbread with corn and jalapenos in it. Thanks Arnie.

    I made some hot burritos today and wanted to get your approval. They are Green sauce with cracklin or chucharon, then I added black beans with Nopales in them, stirred it all together and sprinkled some cheese on them. Used a little OG on them too.

    Milton here from Southern North Carolina. I this morning cooked large Lima Bean in chicken stock, salt and pepper only. I have jalapeño’s, tomatoes outside, the other ingredients in pantry. Definitely will increase the flavor of my Lima beans this afternoon. This is the reason I watch - I increase my knowledge and most important my TECHNIQUES ------> recipes are guides only!

    I have a recipe for pinto beans that is a prize winner, and one for black beans that I won a ribbon for.
    Your pinto bean recipe is almost the same, but I don't use bacon or jalapeños. And it cooks over night in the crock pot. I can't wait to try your recipe.❤

    It’s interesting to see and nice that you mention how different Mexican recipes are made differently in different states;… i used to spend hours arguing with my Texas buddies that fajita is Carne Asada in California.😂… shout out to all the Texas boys specially, from the 956 i worked with a lot of them in the oil fields. Good people down there.!!

    My beans are on the stove cooking as I type this. I did mine a little bit different but based on your recipe. What I did differently: I used chicken broth as the base of my soup instead of just water. I also got two pablano peppers and one mirasol pepper (a fresh guajillo pepper) right off of my plants at home. I roasted them and peeled all them. I also used fresh from the garden home grown tomatoes and instead of jalapenos I used two serrano peppers that I bought from the store, so a total of three different types of peppers in my beans. I also used some home made fresh bacon along with some store bought salt pork. I will probably wait and eat it tomorrow since it's already getting late.

    Thank you for your channel. I grew up in South Texas and without a doubt, South Texas Tex Mex is my favorite food and IMO the best Mexican Food anywhere in the world. It has great flavor without adding the ridiculous ingredients seen in many restaurants today. ❤

    HEB carries Frick's pork jowl bacon. I use this in place of both the salt pork and bacon. Lots of yummy collagen in the cheek and a deep smoky umami. I render it down a little before adding to the beans and it gives me plenty of fat and fond to saute the veggies with.

      I forgot to say I also add chicharrones to my charro beans. It's a textural thing that not everybody will like but we love it.

    Thanks, Arnie. I am making Americanized Barbacoa today, and one of my daughters asked if we can try pinto beans, and not refried. I have not made Barbacoa, and I am using a chuck roast because it is available and I know it can be shredded. It will be smoked and seasoned.

    Wow Arnie, i just had my first go at these, i had to use a tin of pinto, so only cooked them for about 20 mins with the seasoning and a red chilli cut in half without the seeds. Did the bacon pan the same just without the selantro/corriander as i just dont like it.
    Tipped off most the water, combined in the frying pan and made burritos with cheese an sour cheam, they are the best ive ever made and its only lunch time 🥳💜, cheers mate, from the UK 😊

    I do this but add beer instead of water once the beans absorb the water and more liquid is needed

    Yes. These are good beans. I don't see the particular brand of dried pinto beans Arnie uses, but the one I do have work every bit as well. This dish is the real thing.

    Made this just this morning and I will say it is amazing. I could not find Jalapeno (normally keep some frozen but was out) so I used Serrano. Okay enough typing and time to eat some more.

    outside of Mexico, no one does beans better than Texas. now, i live in eastern Maine, but up here it's baked beans. on saturday nights, when the weather is cool, we do baked beans and fried dough. i did live in Meyersville Texas for 13 years, so i can do them both.

    This is very close to the beans the Wife and I make.
    I sure love living in Texas with all the Mexican and Tex-Mex foods along with the Cajun Creole/Cajun food.
    And we also have the best BBQ in the world as far as I'm concerned.
    The thought of living up north makes me wanna cry......

    Those looks really good. I made my first baked beans recently and some scratch black beans with home smoked hocks. Gonna make my own from now on, getting more shelves for the smoker, more shelves= more meal prep deliciousness and shortcut to better soups and peas/beans

    Made these Bro, leaving out bacon and using on whole habanero.
    Forgot about the slow star to prevent cracking.
    And these were the best!
    I grilled some shrimp and had a party in my soul food diary.
    Had shrimp for a creamy scsmpi pasta dish but needed an easier dish and beans were done already.

    Arnie, i just made these beans yesterday and i can't stop eating them! they are delicious! only change i made was i didn't have any salt pork but i did have some Eckridge sausage, so i subbed that. next i'm going to make some of your salsa.

    I will make this recipe! I make a similar recipe, not as good as yours. Then I dice avocados on top and use Tostito's scoops. I eat eat that for dinner frequently and never get tired of it.

    There's a lot more to beans than pintos.
    Try mayocoba AKA Peruvian/ peruano/canary beans.
    These can be found in any Mexican market in bulk, Roman AKA cranberry beans AKA cargamanto beans.
    Anasazi beans are fantastic as well.
