    When-ever I do my baked potato and I emphasize "My" I always bake it unwrapped, no foil. Just for the simple reason I love the crunchy outside skin. That is exactly what you achieved here. Then the toppings like you said can be what ever is your preference. Great Job!

      Hey here is a thought..I personally have switched...no oil...just wash off and immediately add salt...the water evaporates and leaves a slat crust...any thoughtw

    You two are mad GENIUSES! This will be going on the flattop this weekend! My son's a weirdo when it comes to sausage, so it will be the bacon option, but otherwise wow! Maybe a dollop of sour cream, and come on man, a little mayo in the beaten eggs!!

    Glad to see the Pit Boss getting some love. I still haven't tried frying anything in that Wagyu Tallow, and I have like halfa can of it. I bought it to put Wagyu Tallow in the butcher paper when I wrap briskets.

      I like it...i just dont swear by it....I think in my mind I want to like it...but I just cant get over the hump...to me its flavorless...

      @@TheFlatTopKing I've found it makes a difference if you smoke the tallow first. Next time you smoke something, just put all the tallow you have left in a disposable half pan or something, put it on the smoker, and just let it sit in there.
      When you're done smoking, you can pour the smoked tallow back in the can and let it re-solidify. Then your tallow has the smoke flavor in it. And the tallow will absorb different compounds from the smoke than your smoked food will, it's a hydrophobic vs hydrophilic thing, so it pairs well with smoked meat too. Mad Scientist BBQ is the one who really started the smoked tallow bandwagon, so he has videos that can explain it a lot better.

    Neil, I think you hit a home run with it. And with using all the vegetables that makes it heartier and more filling without all the calories.     As a ex cook (parents owned a restaurant) you are a pleasure to watch...great talent. I have a Camp Chef flat top and smoker and I use the smoker alot but not so much the flat top but your cooking is pushing me toward it more and more.     Love it, love it, love it! Now that I've seen it, I can't believe I didn't think of it. I love potato skins and cooking on the griddle is easy and fast. All I need is a ball crusher to flatten them with and I am good to go. Thank you, Sir! Those looked really good. I'm already running through ingredient combinations for various types.

    When Amy said "hot sauce", my heart melted... THEN you use our sauce a minute later!! ❤❤ Great cook right here, awesome method. I think hollandaise sauce would be good, but with different ingredients like ham and shallots. Either way, totally awesome cook, and customizable to whatever your tastes are!

    Love this, went out and got the tatters, going to put these on the griddle this weekend. Sausage, bacon, good burger or venison are all options for this idea. Your technique for the non-stick surface is perfect for the new Eseries Blackstone electric griddle as well, double win when the weather is a problem. So glad it's on the web site already as a recipe, thanks to you and Amy. BTW, the goodness you cleaned out of the potatoes, I'm grillin with the veggies but seasoned with s[ices, see your students learn too.

    Please help me make my decision . I see you're cooking this recipe on your PitBoss ceramic nonstick griddle, and I'm just not sure which one to go with...??? Either the BlackStone rolled steel 36" flat top griddle or ............... this ceramic nonstick surface PITBOSS model ??? I would mainly be cooking breakfast items on my grill and smashburgers for sure.

    Nice. I was just thinking about Korean Street Toast and it's suitability for the griddle. You should give it a shot and put your spin on it. I first discovered this delicacy last year while having breakfast at one of my wife's favorite diners. I've tried it a few times and it's super simple to make and there are a lot of unique approaches to jazz it up even more. Food Wishes here on YT has a traditional take, and for something way "non-traditional, look at Jason Farmers take.

    I need another cookbook about as much as I need a sack of rocks,!, but, have you considered putting together a pamphlet/pieceofpaper/notebook/cookbook, [hard cover preferred], of some of your creations? I'm new to griddle cooking. I just purchased a 2 burner Blackstone griddle this past November and need ALOT of education! I'm more of a whole wood offset stick burner, low & slow, or natural lump charcoal grill type of cook. Griddle cooking is entirely new to me. When the heat of summer arrives, I'm thinking the griddle is going to be the winner over a live fire when cooking time arrives during the heat of the day! This potato skin recipe is KILLER! It's both breakfast or dinner!
    BTW,,,,What did you do with the potato that you removed from the skin??

      Well right now we just offer the recipes for free on our website...I would like to try to build that in a monster...just takes time...plus its free to you guys...Would I like to Yeah...but I dont think now is the time....I want more of a following...I am in the process of marketing my steak seasoning...
      as for the flesh of the potato...I made a quick fried potato hash for my daughters

      @@stevedipersio8037 have to say. I have been doing something different lately. Water to wash potatoes. Leave wet. Salt immediately. Unwrapped. In oven the water evaporates and leaves a salt crust. Vs oil dripping and taking the salt with it.

    😮‍💨. Damnit man does that look delicious! I’ve done vinegar smashed Yukon gold potatoes on my BlackStone but that’s a whole different level. My next crawfish boil I’m going to experiment with smashed red potatoes from the boil with corn and peeled crawfish🤤🤤

    This looks great. One thing I'm going to point out though. You didn't mention about or show you need to bake a potato first. I'm sure there are going to be some folks who cut in half raw potatoes and wonder what wrong with the final product 🤔. My question is did you bake the potato that mourning or the night before? I'm thinking I'd prefer to bake them the night before because the last thing I want to do is delay my breakfast one more hour or more. Great video, have a great day 🌤

      I would have stayed away from the olive oil because the heat and the amount of time the oil would have been on the griddle...the others is a toss up....somewhere swearing by the beet fat..so I bought it to try it out...I honestly have not been that impressed

    It's so weird that I met you in the shower room. Even though your version of it is pure comical fiction. I met Brad in the scullery while we were assigned to mess duty. But he never asked me out and that's a bit odd knowing how he loves asking quick questions.
