If i understood everything correctly, Aizen's reiatsu level is so high, it creates a defensive barrier or shield Any individual with a very low reiatsu can't touch this barrier and if they do Their hands are burnt or something Also the "seal" they put on aizen don't really negates the reiatsu or destroy the reiatsu All those seals do is just keep his reiatsu close to his body I think because of these 2 reasons the guy's hand got vaporised
It's because of Aizen's spiritual pressure that is why he is a war potential Aizen's spiritual pressure is bound around his body due to the seals on him so if you touch him or go near him without having spiritual pressure equal to him you will die similar to the man he bumped into he was split in half in the manga.
