You can get the same tone with a mid tier tube screamer (I use plumes) and phaser. For better dynamics, I like to use any kind of distortion just to get it punchier on power moments

how do you record with the headphones plugged in and still hear the guitar sound? as well as backing tack and song

There are a lot of different methods for that. If you just work with a very basic setup (only mic, or a direct jack input from the amp), then:
1. Some recording software often takes the input from a mic or a jack from the amp and outputs the input as well as the backing track to the headphones
2. If you record the guitar with a mic (a at least half professional one :P), then there are a lot of mics that have a output jack too. Your computer can send the backing track to the mic and the mic then merges this track with what it is recording live and outputting it to your headphones

for ios - i use Guitar Tune for standard acoustic tuning and Fender Tune for electric guitar tuning and for other tunings for acoustic. the free versions of both get the said jobs done
