I usually always grill my steaks, attempted to cook one stove top and always get a little nervous cause i was pulling them off to early. I followed all your tips and made changes due to the thickness and it was the best steak i ever cooked in my life! i cooked it medium and it was perfection!! i actually think i preffer it stove top rather then grilling due to the wonderful searing and crispiness. Thank you again for you great videos. My uncle always said "if you cant cook a steak right, then your not a man"
I got this dry aged befe con hueso (New York Strip with bone) and am totally excited about using your recipe. Just picked some fresh thyme from the garden.
Crazy thing is, this the third video I watched. All did the same exact thing: salt and pepper, pan or skillet, butter and thyme, spooning butter, then slicing it, medium rare. No fucking oven!!

You can leave the strip in for a few more minutes per level of doneness (med, med-well, well done). got like a cheat sheet for times in oven or something feel like im missing a very portaint point

I usually buy Private Reserve filet migins from Omaha steaks but as you know can get expensive. I cook them on a griddle pan butterflied "Well" and they turn out nice and tender. I tried with top sirloin and they came out tough? What could I be doing wrong?
Ballpark...add about 5 minutes. But really you need to practice it as it varies with the thickness of your steak. Or use a meat thermometer and bring to a 150 internal temp.
i love this channel and all, but this pretty much the exact same vid i've seen gordon ramsey do on how to cook a steak. right down to the thyme and butter basting. that said, i'm not sure whats the point of throwing it in the oven. i eat a lot of pan fried steak, and i just do 4 minutes on a side, works pretty perfect and tastes great, and not too rare or anything. not sure the point of 2-3 minutes a side and then putting it in the oven for 2 minutes, when just one more minute in the pan gets you to the same place (and from what i can tell, actually tastes much better) i guess if you are cooking a particularly thick steak the oven method may have it's merits, but normal thickness steaks i think just pan frying is best.
Hi great points. I use the oven to bring the steak from rare to med rare. Longer, you get to medium and so on. I like the oven because it lowers the risk of over searing the outside, and allows me to walk way from the stove for a few minutes.
I know that kid in the background is like 6-8 now and you may very well be a parent yourself by now, but just bc they're hollering/crying/carrying on doesn't mean ya gotta run to them everytime. In fact, that can be very damaging to their ability to learn independence, and grow their confidence. Mine are 9 & 12 now. It worked on them.

Sirloin has less fat...and will naturally be tougher the more you cook it. I'd try medium.

What about the folks who say salt draws moisture from the meat so you should salt after you cook? They you end up steaming your steak.....
